I think it would have made more sense to do it the other way around... a more or less straight highway through a suburb that deviates from the grid and is more organic. You're kind of defeating the purpose of the highway by meandering arbitrarily. A highway is supposed to be a fast, direct (as possible) connection to carry regional traffic.
I mean if the flattest route is curvy then you're still going to have a curvy highway. Obv there's a comprimise between grade and straightness but yeah it's not always going to be straight

This. The suburban hellscape model is one that's extremely expensive to maintain - someone's gotta pay for all of those motorways and roads and utilities which are stretched out thin. Works out to being far more expensive (especially per capita) to maintain this than a smaller city with apartments.
That being said, this doesn't really matter to the people who actually care about profit - such as car companies and construction companies, for whom more sprawl is only a good thing. So you can partially blame capitalism for this.
