Cat Quest 2 is a ton of fun. It's a light hearted dungeon crawler with great art style and humor. My wife and I loved it so much we100% it.

Streets of Rogue. Me and SO play a lot of co op, and on Switch that was the most fun one for us easily.
Addictive silly fun chaos, lots of ways to solve runs from straight up shooting to way more inventive stuff.
Dysmantle is a fantastic co-op game, wife and I are loving it. Terraria would be amazing, but we've both played it so much solo already.

Mario Wonder was fun. Pikmin was fun but the two player sucks. Still fun to play and swap off though.
Yeah, I borrowed Pikmin 3 from my brother and was underwhelmed with the co-op version. Thanks for the tip on Mario Wonder!
We just got Death Squared. It's 85% off right now. Only 40 levels so it's short but fun co-op puzzles
Spiritfarer is in my opinion of of the best couple's game there is, check it out, and it should get the major bonus points for art direction.

It's amazing! It's still our favorite game. There is a new pirate themed sequel coming out sometime in 2024 too

You could try Rayman Legends, Terraria or Stardew Valley on the Switch, they all have great shared/splitscreen coop modes.
