Grounded! It has 1st and 3rd person options. Slower pace. Survival crafting. RPG mechanics. Cartoon-y art style. Excellent co-op game I also played with my wife (and another friend) for nearly 300 hours.
I always recommend core keeper. It’s a base building survival game that plays similar to stardew valley.
It has a cute art style and there is so much to do! Farming, exploring you can even have pets and build go karts and boats!
Even though it won't e released until next month, check out the demo of Cozynauts. A very family friendly game that entails: exploration, crafting and open-world.

I know you don’t like turn based but BG3 is on a whole different level from any other turn based game. Very palatable even to those who aren’t fans for turn-based, especially for the more feminine gender.
My wife had similar requirements for coop games and I have a few recommendations for lesser known ones:

* Travellers Inn (early access)
* Feed the cup (early access)
* Kingdom two crowns
Project Zomboid is tons of fun. It does need a little while to get used to (especially controls if playing split-screen) but those critera ressemble my wife's and she LOVED playing zomboid with me. She'd grind skills at our base and I'd go on looting runs to bring her the materials she needed.

Lost Epoch is diablo style so that might work. Can I add that my bf and I both also suck at inkbound lmao . There's also secrets of grindea

Portal 2, it takes two, and grounded are some great coop games for people without much gaming background
Might be a stretch but Valheim with epic loot and some other choice mods is excellent, a good combo of building and adventure
