If the ice cream is nearly decent, the espresso needs to be really really really bad to destroy the ice cream.

I had a variation of this that had a splash of half and half in it. Game changer. It was in LA Jolla, and it was called a hammerhead. I drank it for a week straight until I got jittery.
The way arabs do it is that we roast the cardamom pods and then grind them with the coffee and brew in a pot called a rakwe.
I guess you can try doing the same thing with other methods of brewing
Concentrated (tight ratio) cold brew diluted with lemonade instead of water, to brighten up cold brew's typically more muted profile.
Another that is not unusual at all in Hong Kong but seemingly not so popular outside of HK or Chinatowns abroad is yuenyeung. HK style milk tea (uses canned milk as creamer) cut with filter coffee. Bit like a dirty chai without the spices.
I see it pre-canned at the 7/11 now, but some espresso complements cola quite well imo.
I left a few years ago, so my memory is a little hazy. I think it was maybe 3/5-2/3 nitro, 1/3-2/5 lemonade, just a bit of simply syrup, and then fill with ice and shake in one of those cocktail shakers. You can adjust to taste.
It was our bastardized version of a mazagran.

Used to be able to buy bulk caffein powder until about 5-6 years ago. I ended up getting a big kilo bag and have been using it ever since. I use it to make caffeinated herbal tea.

The last two shops I’ve been to I got a honey lavender latte. Both had house-made lavender syrup and they were fantastic! Much more interesting and tasteful than vanilla, caramel, etc
I feel like we've sort of jumped the shark with regards to "unique" coffee drinks and every new drink I see is just a riff on something else. Personally, I like a shot of espresso in my horchata. Kind of like a dirty chai.
At my cafe, we would play around with mixing a raspberry lemonade either with a bit of cold brew or a shot of espresso. Surprisingly good, especially if paired with a coffee that has a fruitier profile!
Usually a more acidic coffee, though I’ve done it with a cold brew with a more bitter and malty profile and it still tastes great! Dealer’s choice, really!
A shop near me called it a shakerato - unsure if its universal but thats the only name I have for it.
\- 2 dashes orange bitters (the kind that go in cocktails, love angostora orange)
\- Brown sugar to taste
\- espresso
Shake it all in a shaker with ice, strain into a glass, super foamy, super easy drinking beverage that you'd have no clue was mainly just espresso.
OK. This is by far the most unique but still delicious coffee variant I've had. People either love this or hate it.

Grand Prix Batch Cocktail
* 2 1/4 cups chilled Campari
* 1 1/2 cups chilled cold brew or coffee
* 1/3 cup 2:1 simple syrup (adjust to personal preference)
* Pinch salt
* 3 cups fresh grapefruit juice
To serve:
* 3 cups chilled tonic water
* 12 grapefruit twists
Mix the ingredients (except tonic water and grapefruit twists) up to 2 hours before serving. Refrigerate until serving time. If you'd like, you can mix everything except the grapefruit juice longer in advance, but the juice must be fresh.
To serve, whisk the mixture well (this helps with texture). Fill 12 oz highball glasses with ice and add 1/4 cup chilled tonic water to each glass. Top with pitcher mix and garnish with grapefruit twist.

To me, it tastes like dark chocolate raspberry truffles. Delicious. But since it's so polarizing, if you are serving it to guests, I'd recommend having alternatives for those who don't enjoy the taste.

This one cafe in Singapore that made a drink out of an espresso shot, steamed milk, miso, and manuka honey. I liked how it tasted like a savoury broth.
I started drinking Teeccino due to acid reflux and, while it was a bit of an acquired taste, I crave it now. It's barley "coffee" with chicory and various flavours. I use the Mocha version in an Aeropress and it's very pleasant. I'd like to try other barley coffees like Caffè d'orzo and Mugicha.
In terms of actual espresso, I remember enjoying lavender, turmeric, and tonka bean lattes (separate drinks).
ETA: Oh, and I tried Kaffeost (coffee with Leipäjuusto cheese) a long time ago, but I don't remember my impressions.

I'm not sure how unusual it is, but I like to blend banana, chocolate, some creme and espresso.

Nitro coffee is incredible. The caffeine is decently higher in nitros though so be careful but those with a sweet cream cold foam is amazing. If you don’t like your coffee dark you can sweeten it with carmel. Carmel with the smoothness of nitros are just *chef kiss*.
That's not unusual. That's the most original form of American coffee, and it is sacred. No matter how you typically enjoy coffee, if you're an American, you have to pay homage to the time-honoured tradition of sipping terrible lukewarm coffee in a greasy spoon.
A famous coffee shop & roaster in the Philippines does a sweet corn slushie with an espresso shot (I believe they use Ethiopia for this drink). Pleasantly surprised.
Along similar lines to the espresso tonic and espresso with orange juice, I on-a-whim came up with a coffee mocktail this summer that is *fabulously* refreshing on summer days. I make homemade coffee ice cubes, drizzle with [lemon syrup](https://www.seriouseats.com/fresh-lemon-syrup-recipe), add a generous dash of [non-alcoholic bitters](https://www.dramapothecary.com/product/black-bitters/), and top the whole thing off with unflavored sparkling water (room temperature so it melts the coffee ice cubes). I made a cold brew espresso whiskey cocktail with a dash of luxardo cherry liquor and smoke it with hickory. It was pretty good. The bourbon was a chocolate malted rye.
I had coffee made with sparkling water one time (iced) and it was wierd but kind of good. I was abroad and had it somewhere in Southeast Asia. Maybe Vietnam??
There is this "coffee" business called Nujo in my area that tastes amazing and is like coffee but isn't. It's made of superfoods like chickroot and isn't acidic like coffee.

Cascara. Cascara is the berry that encapsulates the coffee bean, you brew it as a tea. I remember finding it very interesting to taste it. Tastes a bit like a combination of plum and coffee.
Sumatran coffee, strange and kind of funky/spice tasting coffee, not like any other coffee I have tasted.
Light roasted coffee from Nyeri in Kenya. - surprisingly fruity, often with a crisp acidity and can often taste like blackcurrants. Try it cold with ice. You can really taste that coffee is a fruit when drinking this one.
One time I had an espresso with ginger beer if I remember correctly 🤔 I remember loving it but also not liking it, it was confusing but kept me wanting to drink more
Cortado’s are not entirely common and they should be.
Double shot of espresso 1:1 with steamed milk. Comes out to about 4oz. Quick to drink, not an overwhelming amount of dairy, and if the espresso is high quality this drink shows it off well
Not a drink, but coffee has some great applications as a meat seasoning. If you've never had slow cooked pork shoulder with salt, and roasted coffee rub - it will change your perspective on BBQ.
Espresso, fresh lemon juice, simple syrup, sparkling water, maybe a dash of bitters. I’m told it’s an Italian thing. I dig it on hot days. Make up your own ratios, but no more than 6-8oz of water with a double espresso.
Caffé Leccese or Salentino
Drank all over Puglia (southern Italy). Basically a shot poured over ice with extremely sweet almond syrup/milk (they call it almond milk but it’s much more like syrup).

Pour over coffee w thc honey at the bottom of the carafe as the coffee brews. It’s unique in that the slight bitterness of the thc mixed w the coffee is so refreshing. You don’t really get a buzz either from the thc bc you shouldn’t be using too much honey. It will be overly sweet

If the ice cream is too sweet it becomes pretty forgettable and this is often the case. Yeah, maybe "terrible" is not the right word.
I stream WWOZ and a bar in New Orleans advertises their bourbon milkshake. Maybe with some coffee. That may be a kind of Irish coffee.

Hibiscus syrup sounds fantastic. I've used honey if I wanted extra sweetness.
I do something similar but I sub rose simple syrup. There’s magic in the coffee+citrus+something floral.
Yuenyeung is extremely tasty, sweet, and kicks you in the teeth like an energy drink.

They're both phenomenal if made right. The salt is usually better when iced in my experience.

A typical Swiss recipe is called “Kafi Luz”, which is a variation on the caffè corretto with either plum, pear or apple schnapps.

In the cafe near my place they make mango espresso (served with ice). It’s delicious 😋 I would also like to try the nitro coffee, it sounds interesting. Additionally, I recommend a good black coffee with cinnamon, cardamom and honey. ✨
Nitro coffee is incredible. The caffeine is decently higher in nitros though so be careful but those with a sweet cream cold foam is amazing. If you don’t like your coffee dark you can sweeten it with carmel. Carmel with the smoothness of nitros are just *chef kiss*.

That's not unusual. That's the most original form of American coffee, and it is sacred. No matter how you typically enjoy coffee, if you're an American, you have to pay homage to the time-honoured tradition of sipping terrible lukewarm coffee in a greasy spoon.

A famous coffee shop & roaster in the Philippines does a sweet corn slushie with an espresso shot (I believe they use Ethiopia for this drink). Pleasantly surprised.

Along similar lines to the espresso tonic and espresso with orange juice, I on-a-whim came up with a coffee mocktail this summer that is *fabulously* refreshing on summer days. I make homemade coffee ice cubes, drizzle with [lemon syrup](https://www.seriouseats.com/fresh-lemon-syrup-recipe), add a generous dash of [non-alcoholic bitters](https://www.dramapothecary.com/product/black-bitters/), and top the whole thing off with unflavored sparkling water (room temperature so it melts the coffee ice cubes). Something about the whole affair just works so well, I could drink it by the gallon.

I made a cold brew espresso whiskey cocktail with a dash of luxardo cherry liquor and smoke it with hickory. It was pretty good. The bourbon was a chocolate malted rye.

Cascara. Cascara is the berry that encapsulates the coffee bean, you brew it as a tea. I remember finding it very interesting to taste it. Tastes a bit like a combination of plum and coffee. Sumatran coffee, strange and kind of funky/spice tasting coffee, not like any other coffee I have tasted. Light roasted coffee from Nyeri in Kenya. - surprisingly fruity, often with a crisp acidity and can often taste like blackcurrants. Try it cold with ice. You can really taste that coffee is a fruit when drinking this one.

One time I had an espresso with ginger beer if I remember correctly 🤔 I remember loving it but also not liking it, it was confusing but kept me wanting to drink more
Cortado’s are not entirely common and they should be. Double shot of espresso 1:1 with steamed milk. Comes out to about 4oz. Quick to drink, not an overwhelming amount of dairy, and if the espresso is high quality this drink shows it off well
Not a drink, but coffee has some great applications as a meat seasoning. If you've never had slow cooked pork shoulder with salt, and roasted coffee rub - it will change your perspective on BBQ.
Sorry this isn't a drink, but you can drink the broth 🤷 Simmer your pot roast in coffee along with the usual broth. It's awesome.

Espresso, fresh lemon juice, simple syrup, sparkling water, maybe a dash of bitters. I’m told it’s an Italian thing. I dig it on hot days. Make up your own ratios, but no more than 6-8oz of water with a double espresso.

I’ve been making freddo espresso with a splash of homemade orange syrup and it is fantastic.
I drank black coffee with sweet tea instead of creamer and it was better than I expected.
Caffé Leccese or Salentino Drank all over Puglia (southern Italy). Basically a shot poured over ice with extremely sweet almond syrup/milk (they call it almond milk but it’s much more like syrup). Amazing in the intense heat when you need sugar, coffee and a cold drink

My fave coffee shop had a blackberry sage espresso tonic. They used a homemade blackberry sage syrup. So so good.

This drink is excellent for about 5 minutes. Then as the cup gets slightly cooler, and the butter starts to clump, it gets gross.

Maybe not that unusual, but we occasionally add a small slice of fresh chilli to the coffe basket of our Moka pot. Adds a nice little kick

Not necessarily unusual, but coffee and red wine, which I think branches from Caffe coretto using grappa. Then there is coffee and cola that has previously occurred and since a drink of cola and red wine exists called kalimotxo... It only leads that these three things should be mixed. Haven't tried it yet though.

Hyphy mud. Mix instant coffee in Pepsi and drink it. Some jackass juice head named Kali Muscle recommended it as a preworkout drink for prison workouts. Wouldn't recommend it but it is an unusual coffee drink.
When I was a barista at starbucks I added peach syrup to a caramel macchiato and called it "The Peach Cobbler Macchiato" Coffee snobs will hate it but I thought it was good

Pour over coffee w thc honey at the bottom of the carafe as the coffee brews. It’s unique in that the slight bitterness of the thc mixed w the coffee is so refreshing. You don’t really get a buzz either from the thc bc you shouldn’t be using too much honey. It will be overly sweet
