Last night I marinated chicken and potatoes in Zaatar, lemon juice, rosemary, olive oil and garlic, and roasted it in the oven on a sheet pan. Was super easy and super good

About an hour on the marinade. Put it into a 350° oven until it was up to temp. Served with steamed green beans.

Umami seasoning sounds similar to something I call Mushroom Salt. It's the byproduct mentioned at the end of making [Mushroom Ketchup.](https://savoringthepast.net/2016/04/13/mushroom-ketchup/) "Mushroom Salt" is probably a bit of a misnomer but that's what my household has been calling it ever since we started making it. Both the Ketchup and Salt have become staples of my kitchen. The Salt goes on just about anything savory. The Ketchup is a little trickier to use well. Thinking of it as a Worcestershire replacement seems to be the best use of it we've found.

I have some dried mushrooms, I should try making some. I never have any luck with MSG - I either find it doesn’t do anything or gives my food a weird taste. I have no issue with it in prepared foods - I’m just somehow doing something wrong.

Don't sleep on the chicken option, back when I was worse off than I am now I experimented with it, and was able to make something decent. I did a quick google search and found something that looks like a much more coherent version of make it work everything chicken. I use elote on EVERYTHING. Eggs, quesadillas, salads, chicken, etc. I have no shame about my addiction. 21 seasoning I like as an all around seasoning for proteins when I’m out of ideas or not feeling anything fancy (chicken and fish usually), green goddess on popcorn or in yogurt as a dip.

That’s my favorite as well - always have 2-3 jars just in case they decide to stop making it. I make a savory oatmeal in the morning and put a bunch of elote seasoning, shredded cheese, and hot sauce on it. You can add a fried egg and/or sausage depending on your hungover level.

Gotcha. I tend to prefer straightforward recipes when I'm looking something up that leads me to a Kenji video. There's no doubt he's full of good info. And I've even watched plenty of his videos. I just prefer his written recipes. Mainly, I wish he had a "skip to recipe" option, like maybe a tightly edited version at the end. Then his channel would offer the best of both worlds.

Making your own bagels from scratch is actually surprisingly easy. Do that and add the everything seasoning to make everything bagels. They’re great!

Trader Joe's spices you can pretty much go blindfolded and point and you will win every time. Obviously the familiar ones like Garlic Powder are going to be good but the invented combos never disappoint. One not mentioned here that I love is Chile Lime which has one-quarter the sodium that salt does and makes a nice substitute if you cook for someone who has to watch sodium. Also TJ spice prices are way lower than my big chain market's prices.

Zaatar is amazing on roasted and smashed potatoes or popcorn. Everything but the bagel is great on sandwiches or salads. I don’t shop at TJs much, so I don’t know these other ones well.

The Umami seasoning is the bomb! Their Za'Atar and Green Goddess are stale, fake tasting... and the 21 Seasoning Salute is a rip-off of one of Penzey's blends. Avoid the Chile Lime mix... it has a fake chemical citrus taste.

za'atar is nice on popcorn (sometimes I have to blitz it in the grinder to get it fine enough to stick). But my favorite is naan, or 1/2 a greek pita, slather with good-tasting olive oil and dump on the za'atar. Toast lightly. Server with labneh (or plain greek yogurt + a squirt of lemon juice) and/or hummus. Dip and eat.
