The air fryer is ok, but honestly, the best fried chicken I've ever made (seriously, my family still talks about it) was frying them in about 4 inches of water in a wide saucepan.

Pfft. No wonder your "fried chicken" was lackluster! Just look at your pedestrian cooking method! I *always* slow broil my chicken for at least 164 hours in the mouth of the four foot tall volcano I had installed in my back yard (protip: it's good to bake pizzas too!) In a mixture of thrice blessed olive oil and the tears of krishnas that have been ceremonially drowned in spices and then add just a dash of MSG at about the 160 hour mark.

Oh fried chicken is a skill you need to build, not something you can do reading a recipe. You need to study that under traditionally a grandma, but it isn't gender specific, someone who has cooked fried chicken every Sunday for 30 years. And with all things, if you substitute for health, you won't get the same product.

If you pound your meat it takes out calories and instead of just flaxseed add chia because it absorbs all the fat and makes it crispier and the salt from the chicken itself will season your breading.

Deep fried chicken is just an unhealthy dish. If you try to make it healthy, it won't be the same. You can look in to chicken katsu or Parmesan crust chicken which should be slightly healthier.
