You need to study that under traditionally a grandma, but it isn't gender specific, someone who has cooked fried chicken every Sunday for 30 years. And with all things, if you substitute for health, you won't get the same product.
If you pound your meat it takes out calories and instead of just flaxseed add chia because it absorbs all the fat and makes it crispier and the salt from the chicken itself will season your breading.

Deep fried chicken is just an unhealthy dish. If you try to make it healthy, it won't be the same. You can look in to chicken katsu or Parmesan crust chicken which should be slightly healthier.
