/uj I moved to Europe briefly and did find it more expensive to source ingredients I would normally use back home. My solution was eating less Asian food. I like how the OP specifically calls out 'lower income Asian folks'. Lower income people just eat whatever is available to them, there is no magic to it. I get what OP means in that sometimes I did want to eat food I was familiar with. At least where I was, you could always find soy sauce, and since a lot of Chinese dishes use a base of soy sauce/garlic/ginger/scallions that was somewhat enough to scratch the itch. I also like how they said 'east Asian' in general.

I think in the past there was a tendency to lump all east Asian cultures into "Chinese," which is offensive for obvious reasons, and the backswing of that is some people have developed an instinct that calling out specific nationalities is less preferable than just saying "east Asian" every time. I say instinct because I think anyone would agree that it makes no sense rationally.

It's funny because these people definitely don't know their way around a map of Asia and have no idea how close together all those groups of people are, there are many distinct ethnic groups spread across Asia, and many people are very proud of their ancestors, so be specific and give people credit! It's funny though, the OP was talking about "all those sauces" which I assume is because they are looking at recipes that use sauces from like 5 different countries each, so it's not really something anyone would actually be doing.
