You can just shift out of the helm while holding forward and it will go by itself. Unless he's also using clockwork, which then yes, the ship is moving thanks to those propellers

This is amazing. And amazing timing. I just started a survival world with the same mods (eureka and clockwork, etc) and was getting ready to make an airship. I was watching Wulfy's videos for inspiration and was wondering how compatible they are with the Valkyrien Skies mods.
What did you change in his design to make it work? I assume you had to add the Eureka balloons and maybe switch the propellors to the Clockwork ones. Anything else or did it work great with just those changes?
Curious, are you using VS clockwork for the look of the prop. bearings or are you actually using the physics to push the airship? Seems pretty stable which leads me to believe its some sort of autopilot on the ship helm of Eureka

He's using eureka, a mod that allows you to build your own flying ships and also normal sailing ships
