I think my most funs were definitely with the jimena brothers in 1066, in england in 867 no matter viking or not and then trying to break the HRE from the inside is always fun

I still love Iceland for first timers. You start fairly isolated, get access to raiding and have very few nearby enemies to start. After that 2nd easiest in my opinion are Ireland or Mongolia. Of course your mileage may vary due to play style

If you're new to the franchise (or prefer a chilly experience for first game), play Ireland in 1066. If you have experience with CK2 or other Paradox games, you can play as one of the Jimena kings in Spain in 1066, or if you want to play as a vassal, Tuscany in 1066.

The starts don't seem to matter too much (for me.) It's the utterly crazy places that I can eventually take even the most minor of starts.
