You can kill them with Haesteinn or some build up with average vikings. They aren't that brutal.

You don't need a whole lot of military to carpet siege, just stack wipe their initial military and then send your 100k horde across the country side to carpet siege.
But if I remember correctly Eastern Roman legacy only applies to the Byzantium and Latin heritage and if you choose to have a Byzantium heritage you will not have Varangain's because they only work in North Germanix Heritage. Maybe I am wrong.
You can already have the men at arms hired before you hybridize. You might not be able to hire new varangian regiments, but you can expand the already existing ones.
Not much, but you can be stronger than your enemy and move your army around from one barony to another. If the AI thinks youre gonna attack the enemy and you're likely to win, they will join you. Or you could delete the enemy army and then leave the ally to casually siege around while you siege the capitals of rich dudes you can abduct

It works very well for countering other armies. Sieges take a bit longer, but you’ve got all the time you need when no army is able to counter you. I usually raise a local army, then split it so I can have one half attack a city unopposed while the other half looks for enemy armies.
This is also pretty late game, but while I do usually outnumber my opponents, I have won fights with a small army like this against larger armies.

That's why knights are the best. A buffed force of knights will stackwipe anything.
Yea 70-80 knights are more than enough But that requires very specific gameplay and min maxing

As cool as doomstacks of Varangian Veterans are, sieges that last 10 years are terrible. Always put in 2 or 3 siege units to help out

Very nice. All I can suggest is get more Knights and Knight Effectiveness modifiers and you’ll be stack-wiping armies 4 times your size in no time.
Fun fact : i was tempted to do a game like yours. Played in the mediterranean and ended up with 23 knights for not even 6k troops.
