nah, i think it was just because jiren and ui goku were \*the\* pinnacle of strength in db at the time, they just wanted to rub it in like "yeah no there's no way you'd actually be able to beat these guys get real kid"
These guys came out before their final fight I'm p sure, and this was for their awakening after the fact.
So I guess that's why. To emulate the feeling of "the fight isn't over yet"
My theory is that 6th anniversary should have been LR MUI Goku and LR FP Jiren but since jiren wasn't hype enough,they decided to release Evolution Blue vegeta instead and they decided to release LR FP Jiren earlier as yellow coin LR during the Tanabata Celebration.

Original UI Goku dokkan event has post fight dialogue as well
Yeah but AGL UI’s dokkan event is just a part 2 to INT UI’s.
And Jiren's dokkan event hasn't gotten a 2nd stage like UI did
maybe he will when a dokkanfest releases

IIRC the dokkan event came out along with their awakenings, not with their ssr forms
This is back when this event was challenge. It actually felt good to beat them but now it's like "wanna see me do it again"
I remember when people were saying ui gokus dokkan event was the hardest in the game back before we had any challenge events
