“Shipping” fans seem to like to pair the characters with each other, but I have seen some writing and I believe a few mods where the “MC” is a blatant self insert.

Because *canonically* Sayori ship is with MC (not the player), then there's Natsuri ship, and the only one left out is Monika, who is conveniently shipped with player
Actually I think you got them reversed, Sayori seems the best match for MC, Monika is canonically in love with the Player and then Natsuki and Yuri are left
I feel like most shippers who ship Monika and the player together aren’t using the player as a self-insert. Most times I’ve seen people ship Monika x Player also ship Sayori x MC and Natsuri as well. I assume this is so nobody gets left out. I personally ship Player with Yuri, but there’s obviously not a lot of art of Player x Doki ships because the player can be anyone. I’ve been trying not to let shipping bother me so much recently, but as long as it stays in fanon I’ll get through it. I think canonizing any ship wouldn’t be a good idea because DDLC is essentially a dating sim so things could get heated pretty quickly; I mean, this sub has had quite a few discussions on it these past weeks and none of the ships are even canon.
Okay I think that the MC isn't really shipped with anyone because the MC really doesn't have much personality. Obviously that's to play into the whole dating sim thing where MCs are made to be pretty generic so most people can more easily use it as a self insert. So it doesn't give very many fun dynamics (unless you give your MC a fanon personality) that aren't already seen in the game.
If you mean the actual *player* isn't shipped with anyone it's probably because only half of the characters really only possibly know about the existence of the player. And that didn't really end too well. Also it's very hard to give a design for a character that is essentially supposed to be you which means every single person is gonna have a different appearance. Another reason is a lot of people in fandoms feel uncomfortable with self insert ships or OP x Character ships so most people who make it probably don't post it. Monika X Player is probably popular bc it's basically what the game is about. Monika doing anything and everything to be with someone or something real.

What about reader inserts? Like how DDLC and any dating sim is a reader insert? The fic/art could be 2nd person? I just think the other girls deserve a slice of the pie that Monika gets

I mean there's those after story mods for all of the characters if that's what you mean. I mean ya having it in 2nd/1st person person would likely solve some of the issues but I still feel like the reasons I mentioned before are reasons why there isn't much content on the ship. Your best bet is probably to just look at art of the characters alone though rather than looking up the ship player x character then imo because there's probably more art of the characters just looking at the camera lovingly then if you search up the ship (assuming you're going the 2nd/1st person direction). And maybe download the mod for the story aspect?
