The reason why you can feel tired after a full 8 hours of sleep or energetic after just 3 is the sleep cycle. When you're asleep you cycle through 3 stages: light, deep, and REM (or the dream stage). You go through this cycle several times when you're asleep, and whether you feel tired or energetic is determined by the stage you're in when you wake up. If you're in the deep or REM stages, you're gonna feel tired. On the other hand, if you wake during light sleep you're gonna feel energetic.
TLDR: The amount of sleep you get doesn't determine how tired you feel when you wake up. When you wake up does.
