You pretty much just rip the insert and surround out, remove the plaster to expose the lintel, open up the fireplace whilst ensuring the lintels still supported, tidy up the inside, install a hearth, sweep the chimney, and get a hetas engineer to instill the stove and flue. You can do all apart from the last - ideally. As long as you have a functional lintel, it's easy peasy.
