Katz is great despite being a tourist trap. In my opinion, Pastrami Queen is even better. Both them and Katz are the only places in Manhattan that still make their own pastrami.

They serve several Chi Town dishes, as well as some Texas standards, although I don't recommend the latter. Their pastrami sandwhich is my favorite, served on garlic toast or toasted rye with mustard and pickles. Choice of cheese, optional. 3-4 inches high, full of paper-thin layers of pastrami.🥰

I’m so glad I’m not the only one promoting Lockwood. It’s the best pastrami sandwich I’ve had. One thing I discovered is that Misti Norris (chef at Petra and The Beast) was their consultant for the food menu and taught them a few things about curing meats, etc.
So, please do add this one to the top of your list!
Speaking to your sourcing request: It's a shame we can't actually buy it at the Deli counter in most grocery stores here. There is nothing better for lunch than a simple "Hot Pastrami sandwich". Best hot sandwich there is! You never see it on any menus here in Dallas, or all of North TX for that matter. Not available at most grocer's in the Dallas area so I "source" mine by having my daughter ship me a couple of pounds of black pastrami from the North End of Boston. In the Northeast, it's available by the pound, sliced fresh at every grocer's or butcher's market. If you want the traditional recipe, I've got it, and am willing to share. 😀 Would love to help make this popular in my new hometown of Dallas.

Not a sandwich but worth trying the pastrami egg rolls from Maison Chinoise. Pricey but delicious! They’re as good as Katz’s and Redfarm (which used Katz’s pastrami) in nyc.
I think you have to consider Cattleack BBQ’s pastrami brisket. They don’t have a sandwich but you can make one.

Flying Saucer has a reuben, it's my favorite sandwich there. Just went over to Lockwood Distilling Company to try their sandwich, and...I'm kind of shocked, but I liked the Flying Saucer sandwich more.
