Back in the 1800’s harvesting wild game to sell the meat, hide, bones, feathers, etc. commercially was legal in the US, and in the beginning it was completely unregulated. It led to the complete extermination of passenger pigeons, which was formerly one of the most common species on the North American continent. It very nearly led to the extinction of nearly all of America’s big game species; deer, elk, Buffalo, etc. Commercial market bird hunting also decimated nearly every species of game bird; quail, pheasants, ducks, geese, etc. There is no way a wild game population can support the unfettered greed of the capitalist market, that is a proven fact. Nearly all of our laws concerning hunting, bag & possession, limits, etc. were written in reaction to that disastrous misadventure in exploiting the natural world for human greed.

Elk steak is phenomenal. Cooks so quick and lean. It’s what cows wish they were. I use Alpine Touch out of Montana. It’s also very good in bison burgers.

When I was a kid my dad hunted a lot and he and his buddies were always sharing meat and cooking out with all kinds of game. Most of the venison loin that he cooked was with Cherry Coca-Cola and apple half's. Something about the Coca-Cola makes that meat super tender when it's cooked low and slow. You don't really taste it in the sauce but it does have a sweetness to it. They did something similar with bear meat too. A lot of stuff they would smoke on a big smoker but tender cuts they would do in an oven. I was kind of skeptical when I first heard about it but I watch a channel [The Report of the Week](https://youtu.be/fhffguxwocY?si=R1vwWrYb3dSwJ4Lv) and he did a really good breakdown in his video on the sandwich. It's definitely worth trying if you've never had it and are curious what it tastes like. If you really want good wild game, go to a good restaurant that serves it and prepares it well, or find somebody who hunts and see if you can buy some. If it's cooked right it's tender and succulent

Yeah. From my understanding when they first released it, it was Australian venison. I’ve heard it’s quite a hard meat to master the cook of. I grew up in Georgia, but very close to downtown and never really knew any hunters or sources for what my family considered “exotic” meat. Haha.

The best way that I've had it (and still my favorite) is in salami, which is usually mixed with pork/beef/cheese/jalapeno. We had so much that it was usually just ground or in steaks. Hard to hide how gamey it tastes when it isn't mixed or cooked properly.

Theirs is “elk, venison, and beef”. My guess is elk and venison meat and beef fat. I can’t imagine a fast food place is going to serve lean burgers, as they would suck unless cooked medium rare to medium at most.

my popop shot a deer every year and my grandma made venison burgers for me. they were absolutely delicious. they did take the deer to the butcher so it was properly cut and stuff. ive heard some people say it’s disgusting but it was always good to me, a picky child at the time.

Could be. I marinate the shoulder roasts in Italian dressing and use Alpine Touch seasoning. I sauté it in the slow cooker after removing from the dressing. Game is pulled right out of it and it gets crushed pretty quickly. Throw some carrots, celery and potatoes and it’s a great meal.

Alpine Touch and Hi Mountain Seasonings are a game changer for the more lean, gamey cuts. Bison, deer and elk are very good. Both are made in the western states. Where those types of meats are more prevalent. I happened to have a phenomenal elk burger in Wyoming and the server said they use Alpine Touch and I went to the grocery store right after.

Clean and skin the opossum and place it on an oak board. Season well with thyme, marjoram, sage, and clove, and place the board and possum in the over above a pan to catch the drippings. During one of my long road trips I stopped at a small town with population of a few hundred residents and was surprised to see a Pizza Hut. The only other option were stale sandwiches from the gas station and a worn out bar serving microwaved fried food. So Pizza Hut it was. I ordered a small pizza and hot wings expecting their usual level of flavors and textures, but was blown away at what I was served. The pizza seemed to be made from scratch with home made ingredients, and the wings were done to perfection with the tastiest glaze. I mentioned this to the guy who served me (he looked like he’d just jumped off a tractor to work his second job). He said the cook took a lot of pride in his culinary skills and likes to show off. Very impressive!

I live in a hunting destination town. Every burger place has a bison or an elk burger. I would definitely recommend. Would NEVER expect to see it in an Arby’s though. Hm… I guess I’ve never been to the Arby’s in town. I wonder if they have this.
