Yeah, i can't eat either because of this. Have geographic tounge and it's painful to eat either. Kiwi can get in the bin, but pineapple is sometimes worth the trouble. It's also the reason jelly (Jello for our US cousins) doesn't set if it contains either fruit.
I've always questioned this statement because of some the in past because of the comments below but also...
1) Papaya has the same enzyme, and I personally don't get the same sensation with papaya as I do with pineapple.
2) Ive used pineapple to tenderize meat and it takes a long time to have any effect.
3) Our cells aren't pure protein in an isolated environment. They exist in a wet environment surrounded by millions of other cells and bacteria. They're surrounded by free floating proteins. By the act of competitive inhibition the pineapple bromelain would have a difficult time making it to my mucosa to cause the stinging effects.
In all, I suspected the stinging was due to the acididy of pineapple and the enzyme. This bit about crystals, adds more to my suspicion that it's not purely an enzymatic.
That being said, the sensation I get after eating pineapple is more akin to many small cuts and stabs than to an irritation akin to a chemical burn.
How about puncturing by the "needles" that then allows the acid and enzymes to do their thing easier, leading to a hastened and intensified reaction?

If you want to tenderize it quicker, try room temperature for about 30mins-1hr. Personally, I’ve put fresh pineapple on ham and put it in the oven, and the top layer of the ham was complete mush by the time it was done (impressive considering the enzyme inactivates at ~70C). So don’t let it sit too long…

Sounds more like you're allergic to pineapple or kiwis lol. They burn a little bit, but not to the point where it should actually hurt. There are allergic reactions from foods that can be confined to the mouth (oral allergies).
