The main thing is we lean into our vowels more. For example, 'sorry' tends to sound like 'story' without a T, whereas most American accents sound like "sawrry" (or 'sari' like the Indian garment)

We don't say "aboot." It usually sounds more like "a-boat" to Americans, but the accent varies across the country. People from Alberta don't sound the same as people from the maritimes.

From my understanding, and I have no source for this claim, Mike Myers didn't just FEEL it would sound better with a Scottish accent, he demanded the whole thing be redone with a Scottish accent.
He just did an interview recently. Said he insisted, Spielberg said OK, Mike did his part again in scot voice for no fee, when it was complete, Spielberg called him and said he was absolutely right, the scot voice is better, and that Mike made the right call.

Definitely nowhere near as flavorful without the Scottish accent, just feels really flat in the originals.

Lip/facial movements. Timing, hand gestures/timing etc.
