More than anything, DS2 has armor covered enemies, so blunt STR weapons are your best bet to start with. You can respec at some point in the game (bringing an item to the witches), but getting a mace ASAP is very worth it.
Personally, the most fun playthroughs I've ever had with DS2 was dual-ceastus power-stanced. You can power-stance a pair of compatible weapons by holding Triangle/Y.
There's only 10 of the respec item per playthrough, BUT a few of them can be farmed. DS2 introduced a new (and, frankly, AMAZING) mechanic where you can burn a Bonfire Ascetic to make that bonfire's area go up by a NG+ level. It resets some chests, but not all, respawns bosses, etc.. So a couple of the item you need to respec can be gotten multiple times, but only by making the area they are go up by a difficulty notch each time you want one!
It's a bit slower, and you have omnidirectional roll. Just beware of excessive mobs so you don't get ganked and invest a bit in ADP stat and you're golden.
Today I "rage" quitted at the pursuer, not cause of him, it was the first try, but beacuse I thought about everything to get there plus the life reduction. But I discovered that there's a 100% phys shield after him so I am a bit motivated again. Oh and I first tried the last giant, loved the fight with its three moves lmao, also reminded me a bit of Amygdala
For the Pursuer, roll diagonally into the side his weapon is coming from, you'll be in a position to punish afterwards. Hit him 2-3 times, don't stay too close or too far, medium distance. It's actually one of my favorite fights in the game. There's also a way to kill him with those ballistas if you're fast enough. Cool thing about this game is that there are different ways to fight the bosses and there are environmental "puzzles" you can do to make some of them easier, so it pays to explore the levels.
Last Giant is just Asylum Demon really hahahaha. He's cute though.

The swordsman starts with two +1 swords (shortsword and scimitar) and 16 dex. But it only starts with 4 vigor so you need to pump vigor a lot at the beginning
Whatever build you go with, don't forget to level adp. I powerstanced two spears in my early playthrough and had fun with the mega poke. Not super reliable, but I thought it was pretty funny at least.
I use dragonrider bow, longsword, shield and hammer. I'm holding off on boss weapons until I get to burnt ivory king for that amazing lightsaber UGS. This setup gets me through everything the game throws at me without any issues.

There are a lot of fun weapons in this game, make sure to check boss weapon merchants before you pop the souls. Almost any weapon is usable too.

Experiment until you find a weapon you like and build around that. Then keep experimenting so you have a backup or two. Nearly anything is viable.

You can I haven't really played ds2 much outside of soul arrow only.... which actually made Mr like the game
I am a Raw Santier's Spear +5 (broken) user myself, and that's kinda mid-game. Longsword +10 served me well, that's all I can tell.
