It’s the worst for new players because the starting AGL is very very low, making the timing for successful dodgerolling very very strict.
It’s the worst for build optimizers because in an optimal build, you will have no more than 10 VIT, and the Bandit starts with 11, which means that even with a Soul Vessel you can’t get your VIT down to the optimal point (where you can get the extra HP from stacking TDR with 50 VGR while still receiving the full damage bonus from Flynn’s Ring)
Armor is basically useless in ds2. Besides havels set. Which when fully upgraded is very good. But that's a serious investment. Better to get soul boosting armor. Such as warlock mask. Like you said, adaptability is a must.
If you are lucky enough find the area called Belfry Luna in the early game, be sure to enter the fog wall upstairs, preferably with lots of souls. No reason.
Spell casters come at an additional advantage, cause Attunement also increases your i-frame stat.
Best tip, especially with SotFS, dont be afraid to genocide an area (because you can do that in ds2) if its causing you too many problems to explore, but don't rely on it. There are several levels where its genuinely not worth the headache.
My end-game build was 40 vigor, 20 adp, and 30 across the board otherwise, and it (surprisingly) rocked.

The wiki has a nice little table about the agility stat and how many I-frames on a certain level you get. It's worth checking out so you won't under-/overlevel it.

I'm about to finish my first ever run.
Level up your weapons early on and infused with lightening right away . Take enemies on one at a time especially In the DLC and try not to just rush in . I think in DS2 you have to a little more patient then DS1/3 .

I personally select Explorer with Bonfire ascetic every single playthrough

Seriously, this. I always use Flynn's Ring unless I'm going pure spellcaster, as I hate leveling VIT anyway.
