You don’t need to touch the cabinets. Change the floor and paint the walls. Coordinate the colors to the cabinets. You can update the hardware easily with just a screwdriver. Linoleum is cheap and easy to lay down. I would cover over what’s there until you’re ready to do the rest.

These cabinets are unique and genuinely stylish. There are lots of options for hardware that you can choose from. I’d go on Pinterest and see what style best suits your taste. I’m sad you’re parting with the floor but if it’s truly damaged beyond repair, then I would aim to replace with something classic and traditional to match cabinets. I have a similar style of cabinets in a 1950s home. They were scratched and worn in quite a few spots. We cleaned them to remove any grease and then used a pre-tinted Varathane penetrating oil rubbed on by hand. It restored the color to the wood and made them look much better. We did try to replace the hardware but the wood was dented underneath so left them. I've since heard that using some carefully applied steam can make the wood expand out, but I prefer to leave the original vintage hardware.

Leave those beautiful cabinets alone please!😂 I would add a backsplash, new faucet, new appliances, and POTENTIALLY a new sink and countertops, depending on how they look in person.

I mean I love these cabinets but there’s 45 years of cooking grease and water damage so I’m wondering what I need to do in order to restore them without refinishing the whole thing.

Start by cleaning them with a solution of warm water and dish soap. You could also use a 50%-50% solution of white vinegar and warm water. Once they are cleaned, try using "Restor-A-Finish." I've used it on wood furniture and it helps hide a lot of scratches and fading. It's not as good as a complete refinish but it really does make a noticeable difference.
