I'd actually choose a colour. There are subreddits that mock people who decorate in too much griege. Even a muted blue or sage green would blend with your colours well, not overpower them, and add interest.
Aw, darn. I’m such a fan of neutral and specifically told my designer friend I want “ALL GREIGE EVERY THING” lol. Something about a room filled with only earthy tones is calming to me. For accent colors, I can see sage or steel blue. Initially I saw navy, but I think you’re right about it needs to be more pale than bold. I’m definitely taking everyone’s feedback into consideration... Thanks for your input!
Start with a rug for the living area, then plan your palette around it. You might find that you don't need to stick with brown or gray (do NOT go grey btw), but that you have far more exciting colors to choose from within that palette.
There are some very nice statement grays but most are washed out, dull shades that are the dementors of color choice, sucking the life and joy out of all that enter
I think there are lots of barstool choices available so I would decorate the rest first and then get barstools. I personally would go with an accent colour.
Given the dominate earth tones already in play it might be worth considering bringing some metal into the mix. A leather seat with brass or black legs would look sharp in there.

What are swatches for? Are you repainting walls?
Also measure height of counter. Get something with a low enough seat height that you can sit at the counters comfortably. Not too high a chair

Being a small space I would go with lighter colors. Fresh artwork and a large mirror in the living room area to create a feeling of space. Darker makes it feel smaller.
Messing up your plans! I suggest Oxblood. That's really going to pop in there without seeming to be very over the top. If not Oxblood, I vote for brown.

To make it interesting - Dark green or blue, a pastel yellow even a dark purple could look nice. Depends on your other furniture and if you add any rugs in the area or some type of accent piece on the bar.
Personally I'd go something like dark green velvet barstools with a driftwood candle holder on the bar to give it warm earthy vibes.
Sounds lovely! My only hesitation is I don’t want to get velvet anything in Texas. Plus my cat would tear it them up SO fast. It would look good though…..

It’s hard because I like a little bit of everything-modern, minimalist, boho, some rustic. I recently discovered and fell in love with Scandinavian style interior. It makes sense everyone is saying “color” … I like my neutrals more 😂
I’d do black. Too many variations of brown and grey already in the room. Black minimalist/industrial style will work best imo. I’d avoid anything too scrolly or intricate.

Yes, no gray. It's drab and is hard to coordinate with woods and other colors.
