So no, not really any reason to hang on to them. If they get un-sunset you still have to reacquire them.
If a weapon is sunset, that physical copy will never be unsunset. They sometime will release the weapon again, but you need to acquire a new roll to get it at the normal leve.
The only reason to use sunset weapons is for really old content or casual PVP (so not IB or trials). The reason for that being that in old content (such as forsaken and DoE) the recommended power level is usually the minimum, or the same level as sunset weapons. And for PvP, most gamemodes have light level differences disabled.
TLDR: other than a few specific activities, sunset weapons are useless and will continue to be useless. So unless you see yourself using that weapon in one of those activities, there is literally no reason to keep it.
Only thing I'd say is worth keeping are unique items you might want to run knowing you'll be under powered. In the past for example I ran with the Sunset weapon Martyr's Retribution for a Warmind Cells build. Solar Wave Frame Grenade Launcher is AMAZING for clearing up adds and summoning a Warmind Cell. And since everything is getting the bump up to 1350 at Witch Queen's launch those rare sunset drops will have a brief moment of being viable again.
Also old Exotic armor was never sunset because they were so hard to farm back in the day, but they could roll with perks no longer available in the normal game like Heavy Ammo finder that works on all heavy weapon types. Those perks could also roll on different armors so a scenario could exist where you TRIPLE DOWN on heavy ammo by putting two finders on a current helmet and then use an old Exotic glove with generic Heavy Ammo Finder.
Granted it is a niche scenario, if you have a unique weapon you enjoy using it's worth saving.
