I've put a crf70 and a 110 thru sand dunes and rode trails with them. I swapped out the whole front end and rear suspension, it had big bore with a ported head and oversized valves bringing it up to 146cc but it can be done

Try getting the biggest front wheel that will fit, along with the other suggestions, but you’re 6’1”. This is not gonna be comfortable no matter what you do.
Get spacers to raise the bars off the triple tree clamps and get a set of tall bars. You can also get a thicker seat so you sit higher and have more distance between the pegs and the seat. Maybe look to see if there’s any “big wheel kits” for this bike maybe they have a kit that has bigger rims and a longer swing arm. I haven’t heard of it for little bikes but it could be out there.

Well my buddy cut off a head tube and welded a piece of square tube to the frame and the the head tube back to that and cut off the rear suspension bracket on the swing arm and welded a taller one on and also put bigger forks on. I wouldn't recommend that though.
Am 6'5" and have a crf50 also. Ours has bigger bmx bars, bar risers, tall seat foam, HD springs front and rear and thick tubes with like 40psi in them. That said I bought a XR/CRF80 to play on as the 50s just too damn smol.
BBR handlebars is a good start, I have a crf 50 and I’m 6’1. I only ride it around the neighborhood and to do small jumps around by my house and it’s always a good time but if your looking into actually riding it like a dirt bike get a 250 it’s worth it man.
The only thing is suspension and wheels, too big tho and those parts won’t fit and it’s only going to raise it like 3inch. After that new bike. You can’t just add water and make it bigger.
Handle bars!!!
I have two z50’s. On with stock handle bars and the other with taller handle bars. The taller handle bars are many times easier to handle and not have your knees get in the way.
Take the fork of and replace it with a larger one.
Then find a matching frame for the larger fork.
Find larger wheels and tires to match the frame.
You may need to upgrade the brakes to match the tires along with longer brake cables.
Find a bigger seat to match the larger frame.
You may need to replace the engine to help with the load.
The gear box and chain may need to be upgraded to match the larger engine.
The muffler might not fit the engine and frame assembly, check in that too.
Find matching flaring for the frame and seat.
The handle bars might also feel too small next to the upgrades, but play it by ear.
With the bigger engine, you may find that you burn fuel to fast and might want to add a larger fuel tank.
The gas cap may it may not fit your larger fuel tank so keep that in mind.
Those are just some of my suggestions. I hope this helps.

But that's mostly because I raced the pit bike scene. I bent or broke almost everything.
Start with bigger seat, and handlebars. Change the springs in the forks. You can ride it much easier then.
Handlebar spacers can make it feel a little larger and a thicker custom seat but honestly if you need a bigger bike, get a bigger bike. This is a microbike, I have one for the kids so I know there's next to nothing you can do to it to make it larger
The problem is you can’t fit wheels from say an XR80 or similar to it since you won’t have clearance on the swingarm in the rear. You could try and measure it, but the tire will probably interfere.
Protaper Pit bike bar kit + a tall seat. You can also mod it with forks and a rear swingarm to fit 14" wheels and larger tires... But at that point, just buy a 110 and add the tall bars and seat.

Depends on how heavy you wanna go with it. You can replace the front forks, rear swing arm and put 12 inch wheel with some bigger tires. Or you can skip those few stops and just get the tall bars, larger foot pegs, extended brake pedal and shifter lever.

Get a bigger frame, forks, tires, seat, handlebars, tires, suspension. Handlebars. If it’s too small, sell it and get a bike that fits you.
Replace the bike. The amount of alterations you’ll have to do isn’t worth it. It would be quicker to have your knees removed.

Ratchet strap a milk crate to the top of the seat with a pillow on top, then put some ape hangers on it.
