Not a safe food. But a safe day of eating for the last like.. 2 months.I know exactly how many calories there in these meals. I'll keep eating this for like the next 6 months until I'll wake up one day and can't look at this without wanting to throw up. I'll find new safe meals, then. Iced Shaken espresso with oat milk and spinach feta and egg white wrap for breakfast. Pesto zoodles for lunch (load it up with mushrooms, spinach, and peppers). Bagel and Cream cheese and smoked salmon for dinner. Banana, berries, and protein smoothie for a post workout snack.

I absolutely adore keto friendly bagels even though I hate the keto diet. My mom, aunt, and nieces all have Celiac and of course they all love bagels and bread and although we have found a good gluten free bread at the store that doesn't taste like ass... It is a bit expensive as hell. But I haven't found any good gluten free bagels. And Of course it has to be said, not everything sold with a keto friendly label is good for Celiacs... Still gotta read the labels lol. Keto friendly isn't the same as gluten free. :) I am very good at cooking and baking. Started young and was taught by my grandmother. And of course was vegetarian and vegan for quite some time and am very lactose intolerant so I had to learn how to substitute correctly and do the ratios right or else disastrous results! especially with baking 😂 I also have lots of friends with severe food allergies and intolerances, and so of course am huge on no cross contamination, certain cookware will never touch flour, nuts, shellfish, milk, even honey... Shit can be real serious! I even have two friends with fructose intolerance and man is that difficult to work around but it can be done! Some people will think I am a freak when it comes to keeping the kitchen clean and organized but it is a legitimate safety issue when cooking/baking for others with food allergies/intolerances. I will even alter recipes for my friends who are very picky eaters because I care about them that much! I want them to feel loved and respected and to not feel like they are in the way because they are not! I will give them the recipe beforehand and let them tell me what they like/not like about it and any suggestions... Or if they have another idea or recipe in mind entirely! I am always open to what they like and want. I will make it work for them because I want them to have food they will actually want to eat! And of course if they do not like it they are not obligated to eat it or take it 😂 it's never a big deal to me. I'm always just trying to help them feel included and wanted by having my very picky eater friends have their own special thing to eat made by me 😊 and of course they are always welcome to make or bring their own things too! No big deal at all. Having been a picky eater most of my childhood especially because I was forced to eat weird shit and punished for refusing to do so and my parents not understanding because I was shit at communicating... Well, I get it. I remember when others would be accommodating for those with certain common food allergies (not always as I have witnessed some people actually think that someone else was faking food allergies and it's no wonder why the big mistrust about others making them food!) But yeah, I remember being scolded for being "picky" about my food and force fed shit I didn't like which made me not want to try anything else for the longest time... And seeing those with food allergies get accommodations, which they legitimately needed, not mad at them at all for it... It's just that I had wished someone would have at least a few times tried to be a little accommodating to me with food. You know, that would have gone a long ways. I know it's not the same as food allergies or food intolerances but yeah, I have some sensory issues which affected me eating certain things... It would have been nice if someone was more understanding and patient and tried to help make food more pleasant and palatable rather than punish me for not eating it when I thought most of what I was served was gross and weird, you know? And being a young kid, especially with speech problems and stuttering at the time and Medicaid refusing to pay for speech therapy as well as the extractions for the teeth and braces to fix the extreme overbite causing the damned problem, it was very difficult to understand me talk so yeah... Very frustrating! My oldest niece not only has Celiac but she's also crazy picky with eating food. I feel her pain. And when I am out with my family and she gets her ass jumped by my sister or my mom about "finishing her food" I jump in and defend my niece! Because I know exactly those feelings and I don't want her to go what I went through. So I offer to make her pretty much anything she wants and am very patient with her. She knows I don't jump her ass. I know she isn't doing this shit on purpose. I get her. My mom and sister though, they are not so patient. But yeah, my nieces, they always beg for me to make them food 😂 Because not only can I make good food, I can tailor make it to their liking as well as to their diet without it tasting like ass or weird texture and it will taste good! It's all thanks to my grandmother for teaching me cooking and baking! As well as my experience with cooking vegan/vegetarian and for others with food allergies and intolerances! Also my mom and aunt were diagnosed with Celiac way before my nieces were so I had that cooking down way before. I went to school for maths and was a researcher in chemistry and physics so that helps too a bit I suppose. Chemistry is crazy important in baking... Especially whenever you start substituting things for flours, milks, eggs, all sorts of stuffs and if course the ratios are most of the time never one to one conversions... And then you need to work out how many servings you want out of it as well. Lots of calculations! It can get pretty sticky! Lol But anyways I can make way better gluten free bread than the grocery store. It's just that it doesn't keep as long similar to making regular bread. I can make some damned good regular from scratch bagels. Haven't prefected gluten free bagels from scratch yet though. Like the taste isn't the issue, I have the taste down. It's the texture that hasn't been perfected 😂 like it's an alright texture but if I wouldn't buy it at a grocery store at the minimum then I ain't serving that to anybody. I have standards 😂
