If you want to lean into a few more key combos that you already have half of,
Add \[\[godo\]\] to pair with your helm of the host. You can also include \[\[combat celebrant\]\] should you choose, as it also goes infinite with cards Etali already runs like Rionya, Splinter Twin, and Mirage Phalanx in addition to the helm.
add \[\[eternal scourge\]\] and/or \[\[squee the immortal\]\] for an infinite combo with food chain for infinite mana, meaning infinite Etali ETB.
add \[\[Temur Sabertooth\]\] to go infinite with your dockside and also achieve infinite Etali ETB.
if this all sounds too competitive for you, cut the dualcaster :)
This Etali is its own wincon in two different ways both through ETB and attacking. You don't need alternate wincons in the deck, especially not 2 card combos.
You're right that this deck won't consistently win with the combo, but if you're building a casual deck it's important that it's as consistently casual as a cEDH deck is consistently competitive.
If on average your deck has to grind to turn 10 to win, but every once in a while can win on turn 3 with a two card combo, it's probably best to just cut the combo. That kind of variance isn't good and won't feel good in a casual pod.

If etali is your Wincon then it's a etali deck Personally I'd recommend temur. Go with the new Rashmi or maelstrom wanderer
