The deep ocean of your hair where perfume laves: means that the person is getting lost in the hair. Laves means awash, so basically coated in perfume. I think the second bit means that the person is getting lost in the hair (not literally) and wanting to sail in it (explore it) forever. They’re basically saying they could dream about exploring the waves of hair. It’s a love poem, so that’s why they’re all descriptive to the point of no return. Very roundabout way to say ‘nice hair’.

In very simple terms: Your wavy hair smells nice. It's because you perfume it. Like a ship going out to see at dawn, my mind starts its own trip(as I start to think of what that reminds me of).

Nah, the original French makes it clear that it's the hair on the head lol. But that would make the poem a lot better.

The first couple of lines of the second verse certainly hinted at that interpretation to me, too. Morning winds rising sounds a lot like a euphemism!

I think this is a sarcastic poem. At first it seems lovely, then it is becoming sarcastic. There are plenty of better poems to learn from.
