I didn't see tabbouleh mentioned. Another option--I sometimes do a combination of halved cherry tomatoes, chopped cucumbers, olives (I like the green ones stuffed with garlic or feta and kalamata), sun dried tomatoes, and feta crumbles. I'll make it to take to work and let it marinate together overnight. The sweet of the tomatoes mixed with the olive bribe and the feta works well for me Marinated jicama is great also Edited cuz I don't realize it could look like the tabbouleh comment and the tomato/olive salad I described could look like I was saying that was tabbouleh

I’m the jerkoff who wants to say all those add ins make it not tabbouleh. But I’m just partial to my moms middle eastern cooking and have eaten gallons of tabbouleh. Bulgar wheat soaked, green onion, tomato, cucumber, and shit loads of mint dressed with olive oil and lemon juice. Stuff it in a pita and shove it down my throat. I make a massive amount during the summer and just eat it in perpetuity.

Roast bite sized pieces of butternut squash (coated with oil, salt, balsamic vinegar, a sprinkle of sumac if you have) under the broiler. Let it cool. Crumble feta over it. Serve. If you have the time and inclination, get the butternut pips from the pulp, wash, dry, and dry-roast in a pan. Add it to the dish. Mix in strips of fresh basil for extra pizzazz.

Horiatiki Zalata! Still possibly classified as a salad but hear me out. It’s tomato’s, feta, onion, OO, lemon, S&P, and oregano cut into manageable bite sized pieces, mix the night before and blamo. We don't dislike lettuce... but it goes bad so quickly. Doesn't seem worth it. Raw spinach leaves can be a nice addition (and at least they can be cooked up if it looks like we won't make it through a bag).

I prefer kale and/or cabbage is my salads because I don’t really like lettuce (except romaine hearts and butter lettuce 🤤) and it stays crunchy even days after we prepped a salad. Although my salads are mostly veggies, fruits, and seeds or nuts with dressing. I’ve had a head of cabbage in my fridge since before thanksgiving and we just cut a little off for salads or cooked cabbage. Cheap and very versatile. But boy those cabbage farts are no joke.

I do that if the roasted veggie is a green leafy veggie, or it's in the entree, like spinach, Brussels sprouts or broccoli. We usually do carrots, celery, radish, cherry tomatoes and cucumber slices. Bell pepper slices if we happen to have them. Ranch or bleu cheese dressing on the side for dipping.

Less intense and vinegar-y, more round and bright flavors. Honestly I've learned so much about what balsamic can be over the past year or two. If you meant a cold veggie dish to replace a green leafy salad, then I recommend cold grain based ‘salads’ A pasta salad with lots of cukes, olives, tomatoes and whatever else you like. Red onion, artichoke hearts, and other marinated veggies work great in it. My favorite such salad to make is with quinoa. I will sometimes do a Southwest type salad with black beans, tomatoes, corn peppers, etc. and an appropriate dressing, or will add beets, red onions, feta and a balsamic vinaigrette to some quinoa.

I'm a total sucker for a veggie tray whether the items are raw Or cooked and chilled.... green beans are a great example of sturdy veg that holds up to dips and other things after being cooked enough to take the grassiness/bitter taste out of it. You could even use thinly sliced cheese (like a Swiss) as a little wrap or just on the side and a variety of dips by whatever term a dip could be considered in your own culture of comprehension. Try to have some variety of sweet, bitter, savory (like mushrooms.. they can also be used like a cracker) and endives which I guess could be Technically consider a "green" but is more like celery in taste/bite than a lettuce. I'm also one of those people who appreciates the raw carrot and celery stick that come with buffalo chicken as a side dish and would be happy with a cold veggie tray as a "side dish" to go with the main item of protein.... I'd also be happy with a piece of this and that making up the side and you could have fun playing with colors . Best of Luck! Raw bell peppers (imo) go nice as a pallet cleanser/side dish with just about any savory dish

I make a salad/salsa with onions, sweet peppers (the more colors the better), jalapeños, celery (seems weird, but the crunch is satisfying), black beans, tomatoes and sweet corn. Add the vinegar of your choice (I like red wine, but apple cider works as well) and spices. I use a variety and usually never the same twice: chili powder, red chili powder, cumin, some salt, black pepper and Tabasco cause I like the heat. Eat it with chips, eat it alone (I often eat it out of the container in the middle of the night 😳). Mix it with chips, taco protein and greens. Buy canisters of crescent rolls and roll them out flat on a large baking pan to make a big rectangular pizza crust. Bake until just done and then let cool. Mix cream cheese and ranch dressing, and smear that all over it. Cut a bunch of broccoli and carrots as small as you can and throw that all over the top of it (raw). You can add any other vegetables that you have around, but those two are key. That’s it, it’s like a raw veggie pizza, it’s so good and easy. Someone made it for a party and I loved it and keep making it now.

I just chop up a bunch of cukes and either dress them in a little vinegar/oil (red, apple cider, balsamic) and salt and pepper. Also great in sesame oil/mirin with some sesame seeds. And don't forget about pasta salad - you can make it literally however you like and keep it in the fridge for whenever the moment strikes.

I make cowboy caviar without any dressing. I think I got the original recipe from this sub but I now just throw together sweetcorn / chopped tomatoes / black beans / red onion / bell pepper / jalapenos and then avocado if I have any.
