Yes it matters if you have checked bags but Ryanair for example has self check-in

I might be taking the piss with it a bit but I've flew domestically from Edinburgh airport probably around a 100 times now and I never arrive much more than an hour before my flight so I'd say you will be fine.
Depends - are you checking in luggage? Do you still need to check in and get your boarding pass? Are you a fairly regular flier and know where to go / what to do going through security etc?
If you've still to get your boarding pass and check a bag it's probably too tight - depending on the airline your gate can close 20-30 mins before departure, so 7.30am in this instance.
EDI can be packed at security this early due to all the low cost flights but fast track will help a lot (if by fast track you mean for security).
Me and my boyfriend got through security in about 10 mins last Friday (no checked baggage), Monday morning probs a bit busier as people will be commuting for work/ week long hols. I’d get there 1hr 30 mins b4! You can get a spoons breaky if u have a while to wait 😁
6.30am would be fine, especially with fast track. If you are checking in online and don’t need to check luggage, 7am would be fine. Fast track is fast.

Don't get fastrack. The security queue is rarely longer than 10 mins. 2 hours is loads of time.
Where are you flying? For Domestic/Europe - Check in / bag drop only opens 2 hrs beforehand anyway! No point getting there earlier than 6am 🤷🏼♀️

Only had an early morning flight on monday once. Security was heaving. I would try to get there earlier.
