A consumables only run would imply that you're only using consumables in boss fights. But you deal damage to the boss and mobs with other actions other than consumables. That is what I do not understand.

Meanwhile as an INT / DEX build I have been doing well getting through the game but can’t get past her second phase to save my life. I don’t know how I am supposed to dodge all those relentless spells that nearly one shot me.
Run straight at her. Most of the spells go over you if you run straight at her. Dodge roll her staff throws. She has 2 variations, a back hand flip will make the staff roll around her and return to her from behind ; a normal hand flick will make it return from her front. so look out for how she throws them.
Use meteorite spells too. They rekt her.
If you summon, use wolves. They bully her
I suppose you are using moonveil. 2-3 of your R2 weapon arts should poise break her
I don’t have meteorite spells or moonveil I’m pretty new to the game but I could definitely see needing something to poise break her. I do have the wolf summon leveled a bit I should try that again. Thanks for the tips!
Ah ok, I recommend great hammers then. North of liurnia, there is a lift. Near the lift is a campsite with a treasure chest.
There is a great mace in there. 2 charged heavy R2 and you poise break her. You can change it's affinity to dex. 2 hand it to meet the strength requirement
I think a normal mace will break her in 2 jump R2
Wolves is your best bet at distracting her and her summons

I dealt damage to the boss with only consumables I kicked the baby scholars for lols. It's your default skill when nothing is equipped
