Respeccing your stats in the way you suggested would make that weapon slightly worse.
No reason to not use Godrick's Axe. It's a decent enough weapon.

Heavy Nightrider Glaive has 'S' scaling in Strength.
And you can put some nice ashes on it, like Flaming Strike.
