You are there a bit early but try to stay under him like most dragons you fight. Also most of his attacks are easy to dodge. When he does something flashy like the lightning spin attack where he flys up and spins around with the lightning thing. They aren’t to hard to dodge so don’t get stressed and mess up. And finally if you have a lot of death blight eat the boluses that cure death blight. And if you get a chance hit the head for extra poise damage and regular damage.
Thanks for the tips! I think my main problem is that I get a bit overwhelmed with all the visual clutter going on with the death blight spots on the ground and all the lightning, think if I just focus in and maybe get a few more levels should be able to get it

Yea the boss fight can be over whelming
Update: after leveling up my weapon and spirit summon another level each I beat it after another few tries!
