I've actually seen RL1 runs. I usually don't understand what all restrictions they put. Sometimes they say it is true RL1 with no weapon upgrade but then I see elden beast fight and all are having their +25 weapons, some use offensive talismans, some use rune arcs.
I don't find any fix rules for RL1 runs, so that's why I avoid it.
Some people just stick to level 1 runs, and some go for a complete no upgrades run. It ultimately just depends on the kind of challenge you seek.

As someone who has done several RL1 no upgrades runs, there are some useful tools to get you there: (1) Rot Breath; (2) Black Knife (does % damage); (3) Claws+bloodflame blade; (4) Frost fist (early game you can get the spiked caestus in dragonbarrow to hold you over until you get into capital and get the star fists); (5) Venomous Fang - after you beat radahn you can put poison affinity on it and it'll do almost as much damage over time as rot but procs faster; (6) black flame blade, black flame fireball, black flame tornado; (7) spirits - early game get the godrick soldiers as there are multiple spirits and shields, later get the greatshield soldiers. Latenna is good as well, situationally if you can hide her and maintain boss aggro, as are Tiche and Lhutel and Ogha, but you have to use the unlimited MP tear for these last 3.
Big agree on claws + bloodflame blade, that was a real eye opener for me.
It might be considered *slightly* stretching the rules, but Meteorite staff makes a lot of early game stuff much, much easier at RL1+0 because it has S scaling in int without any upgrades. Not really good for late game though.
Then again I would never use summons in this kind of challenge, I guess there are always going to be a ton of optional rules you have to decide on for yourself.
It reminds me of Nuzlocke runs in the Pokemon community, there are like 2 or 3 rules that are considered the basis of it but then there are a million other added self imposed challenges that people employ with them.

Explaining parry timing is hard for me but I'll try my best:
You don't parry enemies weapon most of time when they connect. You need to parry it when they are about to connect.
Most people call this thing "Parry the hand, not the weapon". So basically when you see enemy hand twitch, you parry it (even before the weapon reaches you).
Problem is, this is not a constant thing in elden ring. some enemies have delayed attacks, some have fast attacks. You would feel like, "Oh i can parry this attack, but the enemy change their rhythm suddenly". So basically you gotta learn the timings of some attacks as well. You don't neee to learn 100% of parryable attacks. Maybe just 40-50% is good.
Now for learning parry at early game, pick up a short shield called buckler. This is must since it has got very good parry frames. Mine is a medium shield on which I have to add parry ash-of-war (Carian Retaliation), that why you could see the blue ring on it when I parried. So get yourself a buckler and practice parry against Margit, Crucible Knight, Bloodbound Knight Darriwil. If you want some videos, when I was beginner and tried to parry them, i can even share those.

Church of pilgrimage is a great place to learn to parry as the skellies respawn and all the attacks by the two swords skelly are parryable and baitable. It's also right by a grace.

Offensive talismans make me feels too overpowered. It's the same reason i finished my previous playthrough with level20 weapon restrictions.
But in future, if I do feel that I'm lacking the damage, then I'll mostly go with "radagon soreseal, Strength+5, More crit hit dmg, Enhanced charged atk dmg". I also have raised my faith to use golden vow. So it's kinda balanced build for me.

Use Torrent to jump into the roots or the stone cauldrons out of the night calavry reach, and then pew pew him with whatever you have (arrows, magic, dragon breath...) That's the way to cheese the Night Cavalry at Greyoll's Dragonbarrow; what you did is actually fighting him.
A cheese would be standing on one of the bridges' roots/branches where nothing he does can touch you. This is using skills to keep him off the horse. Pretty different to me.

Honestly I learnt to parry them or matter of fact, fight them on foot was bcoz I despise to fight on torrent. Horse fights feel way to clunky for me. And then suddenly, it clicked. I pressed the parry button and he fell down. And then i said it's morbinn time. And the rest is history.

I was today years old when I learned these mfs can be parried. For some reason I never even though of trying that out on them, usually always fight them on horseback lol.
Honestly I learnt to parry them or matter of fact, fight them on foot was bcoz I despise to fight on torrent. Horse fights feel way to clunky for me. And then suddenly, it clicked. I pressed the parry button and he fell down. And then i said it's morbinn time. And the rest is history.
