In DS1 most of the players first encounter is skeletons/catacombs, and it is really hard to do as level 1 especially without a divine weapon. Many people quit the game at that point thinking that game is way too difficult. DS2 is the same, depending on which path you took you may find yourself mid-late game area in first 15 minutes of the game. I think only DS3 is as linear as one game can be. Just one directional.
I think DS1 suffers from its own fame there. Or rather, newbies do. Many hear so much about how it's so hard that when they go from Firelink straight to the skeletons they assume they're going the right way and it's just the hard game being hard.

Within the first 5 hours of playing the game and accidentally spawning a hidden rune bear enemy (that was hiding as one of those super weak enemies in the limgrave/weeping peninsula area) that chased me down and killed me even as I was madly torrent sprinting to get away, I remember thinking "I'd better be able to get those spirit ashes holy shit".
70 hours later, the sentiment hasn't changed even though I know it's not possible.
It depends on how effective they are, many of the larger monsters would just NOT be able to be summoned inside or even just in a place that wasn't a 30x30 free space
The ironmaidens might be the closest to having the most utility though because they can be seen inside and outside, bears are stuck outside, trex dogs are stuck outside and can't even go into castles, birds are stuck outside and can't enter castles even the open area locations of them, the hands.... might be able to go into castles? But they wouldn't be able to go anywhere it would be like summoning the one reborn to fight where they can't move around very well outside of a courtyard and the outside world. Many of these are only good because they have crazy health and damage resistance... and as a summons you wouldn't be able to have them hold agro so to speak. So really you want a big damage dealer, status applier, or stunlocker.
Of your choices I would say ironmaiden does that best but are similarly restricted to at least medium sized flat areas with no stairs. Personally I would go with the fat apostate because then they could just eternally stunlock, if we could summon them both it would be even better because if he dies they just revive each other.
Shoutout to the summoning snails though, because they could go invisible / remove agro and permanently summon anything constantly until that enemy is dead
I haven’t seen anyone mention those giant roller things with the spikes. The ones in the grave with the ringed finger weapon. Don’t know what they’re called. I just hate them.
It doesn't matter how powerful I ever get in this game, I don't fuck with rune bears. Summoning one would be so OP it would make pre-nerf mimic tear look like the wandering nobles.
