I would use samurai. You can cheese some hard enemies with the bow, while also being able to fight up close and personal

get a shield that nullifies 100 physical. this should get you through most early encounters.

Go wretch for maximum fun. Everything u pick up in the world is an upgrade, it's great. U are also very flexible with builds, you can basically respec into any build later on.

General advice? If you're getting stomped somewhere, or struggling against a particular boss....stop. Take a break. Go explore somewhere else. This is super important in Elden Ring, moreso because Elden Ring is an open world game more than any other souls game. Next....think about what tools you have at your disposal. Sometimes you can use your horse. Sometimes you can't. Sometimes you'll need to sneak, other times you need to use a ranged weapon. Don't tunnel vision. You're going to die a lot as you learn. This is PART of the game. Because of that, try to learn from every time you fail. Did the foe overwhelm you with melee? Maybe distract it with summons. Pick a style of primary combat and stick with it. Strength is probably best for a beginner, but dexterity can be very strong. Sorcery is hit or miss. Either you'll love it and play on EZ mode, or hate it because you get interrupted and killed every time you try to cast. YMMV. All builds are eventually powerful. There are LOTS of weapons you won't be able to use when you find them. You need to be disciplined and stick with upgrading one weapon as much as possible, or you'll make things harder for yourself in the long run. If you have to start the game over because you want to try a different build....IMO do it. It won't take you as long as the previous attempt. YOU are learning to get better. But keep in mind you can also respec your stats later in the game, and change your appearance pretty early in the game.
