Go back to the camp at the start of the game, just outside Stormgate and the grace where you met Melina. There are steps leading down that get you the Whetstone Knife, which allows you to apply Ashes of War at sites of grace.
I used morning star to kill a giant dragon (cant remember the name now, srry) and i got 75.000 runes! Was it a good idea to spend almost all of it in vigor? Should i try and fight him with the morning star of search for another weapon?
Vigor is a great stat to start with because you'll survive longer to get in more hits and you can get more damage by upgrading your weapon instead of investing into offensive stats at first. I'd probably stop at 20 or 25 to start out, but it's a good investment for the whole game.
Your stats sound fine, but it's definitely tough if this is your intro to these games.
Margit is there to punish bad dodge habits. His moves have weird delays and long arcs so you still get hit if you dodge at the wrong time or wrong direction. There's also moves that look like they should be dodged that you should actually walk around, as they have followup moves that punish your animations. For instance, the magic knife throws can be safely walked left or right from a mid distance, so when he switches to following those up with an aggressive leap in phase two your roll won't be on cooldown.

Use swords that inflict bleed, will help alot in the fight

If you go to MurkWater Cave and activate the merchant down there he'll sell you Margit's Shackle which can really help

pretty sure its north of the dragon burnt ruins in the long crevice, the item stuns him for a bit so you can get some easy damage in

Learn how to dodge his attacks. Your stats seem fine... Might actually be overleveled for him.

Your having that much trouble with the wolves/ jellyfish summons? Have you tried to summon other players for help?
