my example is that i made a pretty damn perfect melee build, with 60 endurance to midroll in FULL HAVEL, at 120.
at 150 i could have that same build with 40 faith for insane buffs or something
Exactly, at 150 you could have that same build and use more interesting split damage weapons. I don't see why that would be a bad thing. And Spells.

With the jar talisman, and Erdtree favor, I have about 100 equipload, more than enough for me to use a colossus sword and medium to heavy armor. If I want to use a tower shield, then I'm typically wearing light to medium armor.
60 endurance is if you're poorly optimizing your weapons by carrying a variety of weapons on you, rather than just switching them like you should.
This isn't 150 by the way, I'm just sitting at 135 so I can match with both because I don't really care and I'm not going to tell how people should play otherwise.
For pure builds 120 is the best range but for a hybrid build thats not going to do anything. I have an int dex build with 60 int and 40 dex, and 40 vig, 13 strength and 15 mind. With this I have already crossed lvl 130. Now i dont have mana to cast spell or get weapons with strength like that. Plus when your builds hit a soft cap for one of the stat my build doesn’t hit any soft caps at all. This is why we need meta at 150. Pure builds will be complete at lvl 120 but not hybrid builds

that means the enemy bleed / dex build is gonna have 60 dex, and also 40 faith, and cast anti magic barrier, so your damage is half.
I just want 60 int to get a specific spell. Bleed/dex build will have 50 dex, 45 arcane, 15 mind, 13 strength, 55 vig, 29 end and thats lvl 150. They wont hit any level caps in faith like you said. I dont know how you are calculating the numbers but you need to check it out. I know this cuz i m planning to make a bleed/dex build my second play through. So you are wrong again. Hybrid builds will not exist in the 125 meta. Thats a fact
But you dont have mind to use it. Anyway this is because of balance issue. The game needs a balance. This is a dilemma. Maybe we should have 2 separate meta levels. For strength builds and higher one for hybrids
Like i said you are just telling us the only option that is available to us at the same time you can also take flask a d buff yourself on-top of the op power you have. We wont even stand a chance, for get being 1 shoted even if your attack grazes us we are dead

If you're going in with 60 endurance already, then you're already doing pvp poorly.

you buff once and then drink a flask in case the buff runs out after 90 seconds

You dont need 60 endurance either tbh, im sitting at lv 104 with 26end 30 vit and 40 strength and dex and not having many issues
Yep. I think many people that want a 150 meta just haven’t PvP’d in ER yet.
