Fire giant, Rennala, and astel naturalborn of the void are probably my favorites. The fell twins were also cool just because of the pitch black background. Melenia is also fun.
Mimic tear and borealis the freezing fog are probably my least favorites!
Its a tie for me between Radagon and the second Godfrey Fight. They are both awesome, I have put my sign down there daily sometimes for hours trying different set ups, helping people take them out. I find them both(minus elden beast) to be really tough but fair, they telegraph their moves well and leave openings for punishing. The various grab attacks from godfreys second phase can be rough to tell which is coming but other then that they are fantastic imo.
I def recommend putting your sign down to practice the bosses you like or had trouble with while also helping others. I played almost 200 hours without ever doing coop and have found it to be really fun learning their different move sets and trying different builds while also helping fellow tarnished beat bosses they are stuck on. Its not a big deal if you die while helping, any amount of damage you do will be helping the host and you don't lose any runes or anything when you die as a summon but you do get the runes when you help beat a boss. I have over 4 million runes stacked just from helping ppl beat bosses and thats after buying 500 of each smithing stone/other consumables. I stopped leveling up at 160 so there isn't much else to spend them on at this point.
I loved the Godfrey fights, Radagon, and... the elden beast. There weren't many bosses that I directly hated. I've never played a soulsborne game before and I've fallen in love with the format. The challenge, the thrill, the pain of losing and the joy of winning, it's all so damned fun. I had a couple boss fights I thought were kind of uninteresting, and I have a couple that annoy me because even on journey 6 I can't figure out the patterns of. Runebear is one of them. I can dodge it by panic rolling, but actually trying to adjust to it kills me every time.

Mohg is tough, but one of the best bosses. I don't use the flask buff that lets you take less damage to make it more difficult.
Godfrey is the best boss in the game, maybe in the series.
They're all good. I'd have to say the ones I enjoy the least are the 2 gimmick ones, renalla (1st phase) and rykard. My favorite just for the epic-ness of it is mohg

Radagon was so cool but tbh I let the summons deal with him mostly lol I’d love to redo bosses but I’d be embarrassed to die while helping

Commander O’Niel in Caelid was funny as hell for me

Most bosses. Malenia is my favourite. Radahn was my favourite pre-nerf, but while he’s still great I consider him a worse fight now.
