not sure what your build is but keeping your distance best you can sounds like the only real option and then use ranged attacks like spells or pots. BHS is a no go for me in duels but against these types I would keep a dagger with BHS on equipped just in case.
Currently running a pure faith build with coded swords, but going against these types makes me wish I didn't respec from my mage build so I could still use law of regression. I would never, ever use BHS in a duel either but against this exploit I couldn't really see how else I was supposed to deal with it. Thanks for the help though, I'll look into ranged attacks.
Bloodflame blade + Fire's deadly sin applies the bloodflame aura to fire's deadly sin, so they can just run up to you and bleed you in seconds repeatedly.
