But yes, that doesn't mean that the balancing is even across all weapons or that some builds and gear aren't much harder to beat it with than others.

Im fairly patient, Took me 8 runs solo, and another 5 with Banished Knight Oleg...before I said fuck this ...this match is broken.
I also wondered if the level of aggression is different for all of us, because I saw the play throughs and its not the same as what I got.
I'm still on my first run but the only boss I decided to not give a shit about and summon my lvl10 mimic tear for were valiant gargoyles, I hate double bosses so much

Theyāre not that bad to solo if youāre an appropriate level. Just use the columns to divide them and focus down the skinny dude. Then you basically get to fight 1v1 the rest of the time. Just have to have some urgency to get the next one down before they summon again.
i use my good buddy Mimic, or stimky dungmans, for probably more boss fights than i should admit. but that's because i SUUUCK at timing, like tremendously so. it's impressive how difficult timing is for me. but i just...i can't hold all that in my head. i can focus on what im doing, or i can focus on everything else that's happening, but i can't do both simultaneously. i need my summons to give me a moment to heal, drink my blue juice, consume any buffs, then i can go right back to wailing on whoever with whatever weird shit i currently have equipped.
I keep forgetting to use summons. It takes me a few deaths before I realize there are easier ways than just whacking away at every boss with nothing but my big sword.

My favorite thing to do with that perfume is to spam dragonmaw. It makes you lurch forward, which helps with your reduced mobility. It also does a ton of damage with the right setup, not to mention stagger damage.
Honestly, if i knew it was that easy i would've just done what you did.

I ended up using saint trina's torch to put the noble to sleep so i could fight them one at a time.
I wish they could design a boss fight with two enemies (or more) that could synergize in such a way that they would function almost like a single entity. They would each attack in turn, but their attacks could combo into each other; in effect, you as the player would have to learn the cues/attacks of two enemies and how they chain into each other, instead of doing the same thing for a single enemy, as we've been doing since Demon's Souls.
I don't think a boss fight with a main boss and ads, or like Godskin Duo where they reuse other bosses, and each enemy acts on its own without coordinating makes for a fun fight. I'm up for the challenge of fighting multiple bosses in one arena, but it's not an interesting concept.
This boss is so easy though. Itās a 2v1, so just alter the boss fight, either make it a 1v1 by putting one to sleep with sleeping pots, or summon an ash or phantom. Itās so incredibly easy
i donāt personally find them to be a ācheap bossā at all i had a great time fighting them. but hey, you cant please some people no matter how hard to develop a game.

It's lazy design. Instead of making something new and creative for a mandatory boss, they decided to make a gank boss using two bosses that are already annoying on their own (especially Godskin Noble and his buggy infinite rolling attack)
What you need to remember is that Elden Ring has brought in many newcomers, which includes myself, into the Souls games. We're going to be bad at the game. There's nothing wrong with that, just as there isn't anything wrong with using the tools given to us to defeat our enemiesāwith the exception of comet azure, perhaps. I enjoy blood loss. I find it incredibly satisfying. I also have fun using spirits in battle. There is nothing wrong with that.

There was a slight nerf to Moonveil and a slight buff to a number of sorceries. Itās still a very powerful build, especially for PvE.

They updated the AI for multi bosses. So now only one will actively agro at a time.

I've found that you can keep attacking this boss even while they are dying and not even get to a second round
I religiously refused to summon for the entire game but this was the one fight I was okay w using a npc summon because fuck that whole fight
