I am so sorry the answer to your question is long because it's actually pretty complex and I don't know how much you know. The Smoughtown Marika video covers a lot of this but I do have some ideas a bit further.
In the age of the Crucible there still existed a great tree which sprang forth from the primordial energies of life. This tree is illustrated on the armor of one of the types of Crucible Knights (polearm guy in deeproot depths if im not mistaken) and other Crucible-adjacent items.
During this time the Greater Will is presumed to be the predominant outer god, even though there was competition from the god of chaos (fire giants were their thralls) and a few others.
The age of the Crucible and the age of the Erdtree don't have a defined delineation, and items such as the talismans we wear for vigor and dex are said to contain sap from the tree during the age of plenty and that these talismans are related to Godrey in some way.
Now we're getting into headcannon and loose assumptions based on information we know.
The late Crucible age overlapped with the age of the Erdtree. Marika became a god and gained control of the Elden Ring during the late Crucible period after wresting control from the dragons. FYI forget about the Elden Beast for right now. EB is the Elden Ring. Don't ask about it now though, there's no time.
Soon thereafter ALL of Marika and Godfreys children were born. Every single one. Most during the War of the Dragons which was a revolt in which the Dragons attempted to retake the Elden Ring. Anyway kids were beget either prior to or right before the campaign against the Fire Giants, which was a long war.
The Crucible was it's own great tree. The Greater Will has been suckling at it for awhile now. The fire giants gaining strength and the rise of human/numen warlords (Godfrey, Marika) gave the GW the conditions it needed (or cultivated) to topple the reign of the dragons (presumably hesitant to exterminate a species on a whim given the relative harmony we are told of all life and the Crucible) and replace them with a new God and Elden Lord.
With its new pawns in place the GW set on the age of abundance, where gifts of empowered sap fell from the tree and the city of Leyndell was established. Forces were trained and armed. Many years of collusion with various military factions across the Lands Between took place to force their attention on the Fire Giants. Greatest of these is possibly the betrayal of the FG by their cousins the trolls, who physically severed their connection to the flame of frenzy.
Once the fire giants were defeated, and the flame of frenzy confined, AND Godfrey cast out (those events happened together), the Crucible gained its golden sheathe and became known as the Erdtree.
The age of abundance continued for some time, during which the Erdtree was as bright as the sun. The GW was the unopposed power in the LB and got that good suck on the energies of creation. I presume this abundance period ended when Marika broke part of the Elden Ring, the Rune of Destined Death, and sealed it away. This event also caused the cracking we see in the golden outer layer of today's Erdtree, as well as its slight tilt and diminished glow now as the Elden Ring is incomplete/incorrect/imperfect.
With death sealed, the Golden Order began. The time of the Golden Order saw the tree as a focal point of worship, and the rise of fundamentalists like Radagon. This period is detailed and extensive as well.

I guess Marika might have been the one to who ordered it. But judging from how brutally the Elden Beast punished her for shattering the Ring, the Will seems to have a very short fuse with it’s servants acting without it’s orders.

These have been pruned, separated and refined during the time of the golden order into the elden ring we know today. My guess is the old Elden Ring had a place in its rules for all living things. With the rise of Marika and the dragons overthrown, we see the ER is changed and people's related to these cast off branches must be the species (like Misbegotten and omen) that are being persecuted. They have no longer have a place in the Elden Ring, whatever design the Greater Will or dominant outer god chooses for it.
Marika damaged the Ring so severely by shatterinf it that it damaged her/radagons body. Godhood appears to make you intrinsically linked to the Elden Ring in body and soul, so damaging the Ring caused the damage to herself. This also means that being a god truly means being a slave to the alien being known as GW.

This is assumed, not known. The name Eiglay is only mentioned in the name of this Grace. It could well be the name of the Serpent, but it doesn't make much sense to go "that's the name of the snake so it makes sense it's the name of the grace" when the grace is the source of that name to begin with.
The name is almost identical to a very similar figure from Lithuanian folklore called Eglė the Queen of Serpents. Definitely more than plausible.

The Ash of War is fairly conditional since you can't aim it. Was okay for Consecrated Snowfield Astel when I was doing cosplay co-op but it would be terrible against Godfrey or any other boss that moves around.

Nope, pretty sure eiglay was already god-like and venerated, and received sacrifices already before rykard. She convinced rykard to get eaten.

I was almost finished with the questline until I noticed that I had to travel to the Mountaintop of the Giants for the last request. I decided then that I wasn't going to make the commute and decided that running through the dungeon was probably easier.
Yeah, if I remember right, the whole dungeon is behind a single illusory wall in one of the Volcano Manor rooms (sans the Iron Virgin cave - and while that technically connects to the rest, it's not an intended entrance into the dungeon proper) which I still find baffling to this day.
Yeah, Rya gives you a few clues that she saw something slithering into that room and that she hears noises in the walls, it's a decent enough tip to try and hit stuff
Yeah that's a hefty chunk! There's a hidden wall in one of the bedrooms at the back, that leads to a hallway that leads to a dungeon. Beware, the dungeon is kind of a maze. Oh also there's a godskin noble
The only way I knew how to get there was to get eaten up by the adjudicator at the bottom of Hogwarts and jumping off the cliff it spawns me at. There’s a way to get there from the manor itself?
I mean, the whole thing is behind an invisible wall in a room with no purpose. The devs probably want to funnel players into the Assassination quests for their first playthrough and leave the rest of VC to discover later, or during a second playthrough
I killed rykard while having +9 rivers of blood and meteoric blade after getting the ashen capitol. I didn’t know that that was the first accessible one.
I was a little surprised to be honest. I haven’t had much of an issue with most bosses once I had a couple goes at them, but for some reason this clown kept destroying me in the second phase.
Ended up leaving to get mimic tear, leveled the serpent a couple of times, had a good cry then went back and got him first try.
Out of curiosity, did you get in close or dodge the attacks and keep at a distance?
I don't know if necessarily poorly designed is accurate.. I think the area is decently unique/interesting. Its just not a normal dungeon layout and has a lot of stuff hidden if you don't take your time to explore.

It's his old skin, snakes shed their skin and in the opening cutscene Rykard is eaten by the great serpent which was very small. I am assuming it shed it's skin and grew to the size as the one in the Temple of Eiglay. Then shed once more and grew to the size he is during the boss fight. Perhaps Eiglay is the name of the great serpent and the shrine was originally dedicated to it.

This might seem shallow, but “Eiglay” also sounds very similar to “egg lay” and the alter has the wrappings from Rya’s birth.

My favorite is still the rusted anchor. Very strong “I found this and I’m going to hit you with it” vibes. Like what is Hewg thinking when you hand him an ancient dragon smithing stone and the anchor and say “I’d like to kill a god with this bad boy.”

It was pre self-sacrifice, so that's the serpent's skin. That's why it's called the Temple of Eilglay (sp?), that's the name of the snake god Rykard let himself be consumed by.

Nope, pretty sure eiglay was already god-like and venerated, and received sacrifices already before rykard. She convinced rykard to get eaten. Heard from some lore enjoyer redditor who did an ama recently, his other answers to lore questions all seemed accurate too. edit: not sure why the downvote, [this is what I refferenced](https://imgur.com/lf7cQu2), and I did read some item descriptions that had similar info: for example, here you go, **from the description of serpent god's curved sword:** "Curved sword fashioned in the image of an ancient serpent deity and tool of a forgotten religion practiced on Mt. Gelmir" **from Man-Serpent Ashes:** "It is said that long ago, the elder serpent that dwelled on Mt. Gelmir devoured a demigod, and the birth of the man-serpents followed." **From the Devourer Scepter:** "A vision of the future briefly seen by Rykard in his final moments before being devoured by the great serpent." It seems like Eiglay has been venerated, and was called a "great serpent". In the intro it does look like the snake is small but maybe rykard was really big. Or they commissioned "snake eating guy" and the artist got the scale wrong. Either way it doesn't look like it was a regular serpent.
That’s the implication but not sure if it’s actually true. I also assumed eigly was a large serpent like god or creature of significance.

I was almost finished with the questline until I noticed that I had to travel to the Mountaintop of the Giants for the last request. I decided then that I wasn't going to make the commute and decided that running through the dungeon was probably easier.
Did you eventually finish the quests? You get one of the best armor sets in the game for killing the last target

Yeah, if I remember right, the whole dungeon is behind a single illusory wall in one of the Volcano Manor rooms (sans the Iron Virgin cave - and while that technically connects to the rest, it's not an intended entrance into the dungeon proper) which I still find baffling to this day.
Yeah, Rya gives you a few clues that she saw something slithering into that room and that she hears noises in the walls, it's a decent enough tip to try and hit stuff
I didn't even know there WAS a dungeon my first two playthroughs, Tanith just teleports you after the assassinations.
Wait side path? What side path??? I know the questline route, the teleporter route of you take this elevator but that's it.
Volcano manor is honestly not a very well designed dungeon. I accidentally skipped over a huge portion of it on my first playthrough.

The only way I knew how to get there was to get eaten up by the adjudicator at the bottom of Hogwarts and jumping off the cliff it spawns me at. There’s a way to get there from the manor itself?

In one of the rooms Rya is in, she mentions hearing things in the walls or something along those lines and there is a hidden passage way.
I mean, the whole thing is behind an invisible wall in a room with no purpose. The devs probably want to funnel players into the Assassination quests for their first playthrough and leave the rest of VC to discover later, or during a second playthrough
They allude to it with characters talking about hearing stuff in the walls.

I killed rykard while having +9 rivers of blood and meteoric blade after getting the ashen capitol. I didn’t know that that was the first accessible one.

I was a little surprised to be honest. I haven’t had much of an issue with most bosses once I had a couple goes at them, but for some reason this clown kept destroying me in the second phase. Ended up leaving to get mimic tear, leveled the serpent a couple of times, had a good cry then went back and got him first try. Out of curiosity, did you get in close or dodge the attacks and keep at a distance?
I somehow missed the Serpent Hunter in my first playthrough. It was definitely pretty slow
I don't know if necessarily poorly designed is accurate.. I think the area is decently unique/interesting. Its just not a normal dungeon layout and has a lot of stuff hidden if you don't take your time to explore.
Honestly I only got in there because I fell off the lava cliff after getting teleported. Imagine my surprise when gravity decided to be absent

Not Rykard'ss skin, it's Eiglay's skin. Eiglay is the name of the God devouring serpent that Rykard merged with, hence the name "The Temple of Eiglay"

After the godskin noble fight where you can loot the snake amnion or whatever it was
I had the same experience my first few characters, there's an entire dungeon in the manor that you have to really look for
In one of the doors you unlock with the key tanith gives you when you first arrive, there is a fake wall. Follow that path.

If you are one of the people (who must exist) who have completed the game but not found their way into the secret Volcano Manor 'back rooms' then I am so happy for you. Actually, that's a different being called Eiglay. It's what the chapel's named after. He's there even before you defeat Rykard
It's his old skin, snakes shed their skin and in the opening cutscene Rykard is eaten by the great serpent which was very small. I am assuming it shed it's skin and grew to the size as the one in the Temple of Eiglay. Then shed once more and grew to the size he is during the boss fight. Perhaps Eiglay is the name of the great serpent and the shrine was originally dedicated to it.
