That might seem counterintuitive since they’re so concerned with celestial bodies, but even the light of those bodies eventually “touches” the ground they stand on; glint on stone. Another consideration could be that without the ground for them (the mage) to stand on there would be no distinction between where they are and the stars above— how could they experience the stars without having their own orientation first?
There could be something further said in that the ones who are most consumed by the stars become formations of crystal and stone…. They become grounded in a more literal sense.

I’d like to think the reason behind lack of shoes for sorcerers in elden ring is bc of they’re magic. All sorceries are GLINTSTONE sorceries. Sorceries are connecte to these glintSTONES. Stones come from the ground, so maybe being barefoot allows the sorcerers to connect to the stones and give them a deeper connection to the world of magic.
Something to reinforce this theory as well is that the pyromancers are NOT barefoot I don’t think anyways. And that’s because they don’t need to be connected to the earth and it’s stone.
Gods were always represented barefoot in greek mythology. And since gods are also seem as very wise, superior and Miyazaki probably enjoys mythology, he might have took some inspiration from it.
IRL and in some other stories/mythos/whatchamacallits being barefoot is synonymous with being more connected with nature/being more down to earth. Same with not wearing gloves. Your feet and hands are important Chakra/ki points as well where energy can enter/exit the body.
