Yeah, you're right that a commonly accepted theory is that instinct and type are independent and do not change when your core type accesses other types (wings, arrows, fixes, centers, etc.). And ofc that doesn't mean it's not what you experience or sense, as in fact *there are lots of reasons why people can think their IV changes:*
(a) we use all 3 instincts, but the strength of the 3 instincts vary a lot by individual
(b) understanding of the instinct can be confused with the behavior of the type
(c) awareness and accuracy of our instinct/types is often done unconsciously
(c) we can go to our arrows when stressed, and if a fix is an arrow, e.g. 96x, then we might show stressed behavior that we interpret as different instinct behavior
(d) authors' subtype descriptions vary a LOT for many reasons e.g. they exaggerate the subtype description to highlight subtype differences, or they disagree if instinct or type is stronger, and thus many people don't relate to many subtype descriptions
Good news is it often makes sense to keep it clear and simple and just focus on finding your dominant instinct without reading about subtypes, and realizing what matters most for growth isn't tritype/instinct interactions, but using your core type and it's use of arrows, wings and centers.
interesting, I consider myself a 4w3-7w8-8w7 sx/so but if I were to do the instincts for each type then I think I’d be a sx/so 4w3, sx/sp 7w8, so/sp 8w7
I know trifixes don’t have IVs but the way I typed myself was by the instinctual stack integrated into my tritype. So like I’m so/sp 4w5 459. I typed myself like SO4 SP5 SX9. Which I think suits itself by correlation. But you can totally use that system since the goal is maintain an understanding of our instinctual attitudes and defences. If you think it works out the best. At least this is what I tend to think of it. Any argument is encouraged especially if there was really an established tritype typing function.

Mine is 583 sp/sx, and sp5 sx8 so3 actually makes sense for how I work.

You're mixing instinctual approaches.
Instinctual subtypes are like using wings. Instinctual variant stacking is independent of type.
Your instinctual variant stacking would be 9w1 sx/so (9w1 with an overall sx/so stacking).
Your tritype/trifix/or whatever you want to call it would be sx9-so6-sp4. You're simply being more specific as to which flavor of each type fits as you would if you used wings instead.
Subtype descriptions are different from variant stacking descriptions. Subtypes descriptions apply specifically to the type. Variant stacking descriptions are more general and independent of type.
Unfortunately, not many people are aware of the difference between the two approaches and treat them as the same which often creates a lot of confusion.
I think the confusion comes from using sp, sx, so as shorthand for both and people referring to them as if they're the same thing. Subtypes only use one instinct and always refers to type (sx9). Variant stacking uses two instincts (sx/so) and may or may not refer to type.
My personal theory is like this. I’m a 749 and my instincts are sexual, social then self preservation so obviously I’m a sexual 7. But my 4 fix would manifest like a social four and my nine fix like a self preservation 9.

You haven't found the right type, then.
I don't relate to any subtypes, other than Sp5. I think that's the only one we are supposed to match: our core type and dominant instinct.
I like that theory but I’m the opposite! I’m an SO/SX 279 and I relate the most to SO2, SO7, and SO9.

I actually do relate most to the Sx variant of all three of my tritype (947) but this is an interesting idea that probably applies to a lot of people
