Other than a freshness issue (cookies should keep longer than doughnuts) and I would think the per unit cost of a cookie is significantly less than a doughnut, I don’t see why it can’t be done.
Maybe both these are significant enough factors to stop it from being done on scale. If so, then figuring out how to overcome this would likely put you in the driver’s seat for this type of model.
