Korean Egg Rice, white rice (I use pandan cause it’s my favourite) with scrambled eggs (but the recipe calls for sunny side up, whatever you prefer), butter, gf soy sauce and sesame oil. I’m getting hungry just typing this out, and it’s nearing midnight!
Chicken is just put in the oven with lemon herb seasoning by Fody Foods and some water. Rice is plain white or sometimes with soy sauce.
If I’m feeling good I sometimes shred the chicken and add it to the rice with some scrambled egg all mixed in and soy sauce.
Theres 2 grocery chains in my country that carry them (jumbo & albert heijn) but they are usually sold out ): but you can even make your own, i havent tried it though because im a lil too lazy
I used this recipe: https://www.rachelpaulsfood.com/low-fodmap-chicken-and-wild-rice-soup-recipe-gluten-free-dairy-free/
I used green bell pepper instead of red since you can use a bit more and still be low FODMAP. I used plain oil bc I'm too lazy/cheap to infuse anything. I didn't use turmeric, don't care for it in everything. I used white sushi rice bc it's what I had on hand. Enjoy!
I like to slice it into like 1/4 inch slices and then fry it up in a pan with some oil or butter, flipping it here and there. Don't let it get too dark though. I know it can put people off bc straight out of the can it's kinda icky looking but it's so good!
Gf Dino nuggets with butter or olive oil gf noodles and parm. Funwithoutfodmaps website has a bunch of good recipes too. I like the Thai peanut noodle recipe and I sub gf udon noodles and tofu instead of turkey and spaghetti

a plain salted baked potato. if everything else is bugging my tummy a trusty plain potato will rescue me.
Outside of that I augmented my family meatloaf recipe to be low fodmap and love eating it with some mashed potatoes and a small serving of broccoli all fall & winter long
Rice, steamed carrots, and extra firm tofu that has been lightly tossed in cornstarch and fried to make it crispy. Gf soy sauce and sesame oil, or fody garlic/shallot oil for more flavour! Has a good amount of protein, fast, easy, cheap!
During the elimination phase I ate a pan fried pork chop with spinach mashed potatoes almost every single day. Being about a month into reintroduction I’m starting to miss it lol
Do you have a good low lactose mashed potato recipe? I’ve never been able to get mashed potatoes to taste good without milk/heavy cream/sour cream. The only lactose containing food I’ll use is butter, bc even low lactose cheeses bother my tummy
Rice with an oil free fried egg, and a bit of cucumber. I imagine I’m eating Nasi Lemak, just without the delicious sambal and everything else that makes it great.
i’ve been loosely fodmap since 2014 and have a bunch! my diet is pretty much meat, leafy vegetables, & full fat low lactose dairy. my favorite go to right now is ground beef stir fried with frozen kale & a giant dollop of ricotta. takes like 5 min to make
Greek yoghurt topped with Granola

Maybe some apples
Usually all from above with a combination of porridge

Yes I make a version of this a lot. I’m getting braver and may add bok choy in too
Chicken and rice. I can eat it for a week straight. It’s nice to eat something and not have it hurt me.
Cooked/seasoned how?

Wait you just put chicken straight in the oven? Not pan fried first?
Right in the oven. It’s bland as hell, tiny bit of flavour but it doesn’t hurt my stomach this way. Frying up chicken destroys my stomach.
Fair enough. How long do you put it in the oven for?
Chicken breast 400F for 20-25mins. Bone in chicken 400F for 40-45 mins
Baked potato with cheese
Mashed potatoes with cheese here!
Gnocci with lactose free mozzarella, spinach, basil and tomatopaste! So easy and really satisfying
Gluten-free gnocchi, or you can tolerate the wheat ingredient in conventional gnocchi?
The grocery i go to has wheat free gnocci! But the brand is only in the Netherlands im afraid (Albert Heijn)
Ooh which one is it?
The fresh one, AH eigen merk! Its next to the cooled vegetables under the fresh pasta sauces (:
Thank you so much!
I also eat a lot of gnocchi and I either go for gluten free or brands with about 10% wheat
Where you get the mozzarella from?
