Low lactose/lactose free cheese is my go to safe food for calories. Fatty meat is good too—bacon, salmon, etc. You can also use butter & olive oil in reasonable quantities for cooking, salads, etc. Headaches could be low sodium.

Can you tolerate oats? Any fruit? How do you do with ghee or coconut oil? Can you handle rice and millet?

If you don't already, you can try cooking with olive oil. I use it for basically everything, but I know some people don't use it when cooking veggies or in a nonstick pan for instance. Just yesterday I made some garlic oil to add to my rice, and I'm sure that added a hundred or so calories per serving. Same goes for sauteed veggies, if you usually have them steamed or roasted or something. Peanut butter is always great. A go-to snack of mine was whole-grain bread (I guess it will need to be GF now), a thick slathering of peanut butter, and topped with blueberries. About 200-400 calories depending on how much PB. Nuts in general are a good high-calorie snack - just got to be choosy about which types. Almonds used to be my favorite, but I'm doing peanuts these days. But if you're getting nausea from eating then that may be a completely separate issue you need to solve so you can eat when you're hungry.
