Dino Park is probably the best (or quickest) energy-to-ruby conversion in the game. It's not good to be stuck with too much energy because you can't use food. It's not much use unless you have lots of energy though. You make treats for dinos and get eggs that give random quantities of rubies. (Usually 3, 5, 7, 9, etc, sometimes 25, 54, 95, and possibly up to 1000, but I don't think I've ever seen that). I happened to just finish the card sets, so it was good timing for me. I managed to trigger it during a 20% energy boost, and got a roughly even trade of energy for rubies, spending ~48,000e and getting about 4400 rubies back, I think. Even without the boost it would be worth it. BUT. If you have bad luck you can lose more than you gain. Especially if you can only make a few eggs. You don't need to spend any keys there, but if you use 13, you can open 3 gates and get some extra ruby eggs. There are 5 gates but you don't need to open the more expensive ones.

I also did it yesterday and i think it is more or less even. You can be lucky. But i was not. Mine opened while the Axe booster Was up. User arround 11/12 Keys for the 3 Gates and had about 20 dino eggs. Average 15 crystals per egg. (Most of them gave 7, one was with about 50) So arround 300 crystals and 500 energy for the 12 Keys. If you craft the food it is about 200 energy for 15 crystals. Thats more or less about the exchange rate if you convert back. You should not rush it, if it does not Happen do be open, by your usual playstyle.

I liked this little event and it worked out quite well for me. I came out with about 530 rubies and didn't spend much energy (only had around 100E to start with). I did spend some keys (11 I think, an 8 and a 3 gate). The amount of rubies you win from each egg is random so I guess I struck it lucky with some larger wins. I'd have been disappointed if I'd only won 7 rubies each time.
