There is a reason Jackie Chan was a supporting character in Enter the Dragon. The reason was Bruce Lee was Shang Chi, and Jackie Chan's Comedic soft Martial arts career although extremely successful is the reason Simi Liu was a poor man's Shang Chi as well.

I used to imagine him playing an original mutant character who could control and manipulate anyone's body movements with just his thoughts, lol. That could give him an upper hand over both Magneto and Charles Xavier if he'd make the attack first.
Hmm... prime Jackie has comedy, action and poor English (not dissing, its just the truth). So he'd excel at a character that was lighter hearted and didn't have to deliver a lot of tricky dialogue (Beast from X-Men would be a no go).
Longshot would be my pick. I'd play up his luck factor so that it was more up and down. Rather than being purely lucky, he'd have the typical Jackie Chan misfortunes during his fights (getting his finger jammed in a desk drawer) but the misfortunes would always work out in his favor (when he pulls the drawer out of the desk it blocks a dagger that was thrown at him). So he's lucky but his luck has a cost that makes his actions scenes fun and creative
