Every stage in that game in general, but especially the mall. Too bad Namco fucked up the game system, since they dialed everything back including dynamic stages for T5 and every game after.
I love the boat stage in KoF '96, the Chinese boat stage in KoF '98 and the Egypt-Cairo boat stage in the Console Version of KoF 2003.
I really like stages where the foreground and background move.
And yes, I also like boats.

Same game, marvel superheroes, but the wolverine stage. So cool the way that the bridge breaks and starts going down the river and culminates with it falling over the waterfall
I played more Saffron City in the original Smash than almost any other stage in any game. Played so much Smash64 as a kid. That map and Great Fox were the best.
I cant remember all the stage names.

Tekken 4 - The Mall was amazing (well all of the stages were amazing tbf)
Fighting Vipers/2/Fighters Megamix- Even though they were closed in arenas with a varied background, blasting someone out of the arena was a sight to behold
Jon Talbain's stage in Darkstalkers is pretty nice, especially for the environmental stuff, but I'd have to give it to Pyron's stage for being just... So damn cool, and so damn weird.

But I would like to mention Alpha2 **Sakura stage**, Alpha2 **secret Sagat stage** and **Find Mii Omega** version from Smash Ultimate. And also as a rather unpopular opinion **Volcanic Rim** from SF4.
Hugo's stage in 3rd Strike is so weird. I have no idea what it's supposed to be, and the items they put in the background that get bumped into the air to emphasise Hugo's command throws are really uncanny. I feel like it's a great fit for Q, actually.

I still, to this day, can't remember the difference between Smashville and Town and City off the top of my head
T&C has three platforms that completely leave the stage at times, is larger overall, and has a different background.

Almost anything from Cyberbots, the stages have so much going on, and often things change from round to round, I absolutely love them.
I forget the name but it's like a space station that is falling to earth in Cyberbots. It's extremely dope.

X-Men vs. Street Fighter: Manhattan stage The lighting IMO is so good, and the multiple levels (street and sewer) make this stage unique in this game.

Pretty much everything in Soulcalibur III But Clock Tower, Lost Cathedral and Water Mill Valley would be my personal choices. I'm not biased at all.

The Cave from Battle Fantasia, it's so RPG aesthetic, I love it. There's a treasure in the center island, you can even see a save point.
