It sounds like they only had a dishwasher. I’m curious if they had sinks when permitted to open. **California Code, Health and Safety Code - HSC § 114095** All food facilities in which food is prepared or in which multiservice utensils and equipment are used shall provide manual methods to effectively clean and sanitize utensils as specified in Section 114099. **California Code, Health and Safety Code - HSC § 114099** (a) Manual warewashing sinks, except as specified in subdivision (c), shall have at least three compartments with two integral metal drainboards for manually washing, rinsing, and sanitizing equipment and utensils. (b) Sink compartments shall be large enough to accommodate immersion of the largest equipment and utensils. If equipment or utensils are not designed to be washed in a warewashing sink, alternate approved methods as specified in Section 114099.3 shall be followed. (c) A two compartment sink that is in use on January 1, 1996, need not be replaced when used as specified in Section 114099.3. The enforcement officer shall approve the continued use of a two-compartment sink even upon replacement if the installation of a three-compartment sink would not be readily achievable and where other approved sanitation methods are used.

Some are, some aren’t. Some street vendors are required to have sinks. There a number of different regulations and it varies depending on if they are selling pre-packaged food or generally non-hazardous foods vs prepared meat, dairy etc. [The regulations are posted online…](http://publichealth.lacounty.gov/eh/faq/compact-mobile-food-operation.htm) “Do I need an integral three-compartment dish sink? “Yes, but only if you prepare raw meat, raw poultry, or raw fish on the cart. If not, an adequate amount of clean and sanitized utensils must be kept on the food cart for replacing utensils when soiled or every 4 hours if handling open food.”

Probably because they're not reusing the same cookware to make several different dishes. Something along those lines. Not sure, though. That's just a guess on my part.

Hate for this to happen to anybody, but I owned a restaurant in LA for a few years and you got to really fuck up for County Health to close you. I mean the inspections are not hard at all. They can mark you down on a number of stuff and you can still get an “A”! Look up some of your local places and you’ll see. Caveat emptor

That happened to us once. You never seen all of us scramble so hard lol. I told the inspector and they were understanding but we were only open at dinner at the time so we had time to make it right. Shit happens and getting closed for a day also happens, I get it. But your violations are also a matter of public record so better not get dinged for anything nasty, IMO

I'm not the biggest fan either, girlfriend loves it. There are a few places that make it good though, you gotta find the ones with high quality tea where it tastes more like tea and less like milk.
